15MIN Noodle Stir Fry Recipe TO MAKE TONIGHT!
LEARN HOW TO COOK THIS FAST NOODLE STIR FRY IN 15MIN OR LESS!
LAY HO MA!! Noodles for you, noodles for me, noodles for everyone! Not only is this recipe delicious, it only takes about 15 minutes or less to whip up. Join me in this episode and learn how to cook this easy vegan 15min noodle stir fry recipe right at home. Let's begin
Ingredients:
60g broccolini
1/4lb thin rice noodles
150g mixed fresh mushrooms (cremini, shiitake, shimeji)
2 sticks green onion
1 tbsp hoisin sauce
1 tsp toasted sesame oil
1 tsp dark soy sauce
2 tbsp soy sauce
2 tbsp olive oil
1 tbsp white sesame seeds
Directions:
1. Boil some water in a kettle for the noodles
2. Chop down the broccolini into bite sized pieces
3. Place the noodles in a pan or bowl and soak in the hot water for 3-4min
4. Slice the cremini mushrooms and roughly chop the shiitake
5. Chop the green onion into bite sized pieces
6. Make the sauce and have it ready by combining the hoisin sauce, sesame oil, and both soy sauces
7. Give the noodles a stir to get rid of some excess starch. Then, strain out the water
8. Heat up a nonstick pan to medium heat. Drizzle in some olive oil
9. Sauté the broccolini and green onions for 2-3min. Add in and sauté the mushrooms for another 2-3min. Then, add in the noodles and sauce. Sauté until the noodles are cooked (about 2min)
10. Plate and sprinkle over some white sesame seeds

Ingredients:
4 pieces garlic
small piece ginger
5 sticks green onion
1 tbsp doubanjiang
1/2 tbsp soy sauce
1 tsp dark soy sauce
1 tsp black vinegar
splash toasted sesame oil
1/2 tbsp maple syrup
1/4 cup peanuts
1 tsp white sesame seeds
140g dry ramen noodles
2 tbsp avocado oil
1 tsp gochugaru
1 tsp crushed chili flakes
Directions:
1. Bring some water to boil for the noodles
2. Finely chop the garlic and ginger. Finely chop the green onions keeping the white and green parts separate
3. Make the stir fry sauce by combining together the doubanjiang, soy sauce, dark soy sauce, black vinegar, toasted sesame oil, and maple syrup
4. Heat up a nonstick pan to medium heat. Add the peanuts and white sesame seeds. Toast for 2-3min, then set aside
5. Boil the noodles for half the time to package instruction (in this case 2min). Gently loosen the noodles with chopsticks
6. Place the pan back to medium heat. Add the avocado oil followed by the garlic, ginger, and the white parts from the green onions. Sauté for about 1min
7. Add the gochugaru and crushed chili flakes. Sauté for another minute
8. Strain out the noodles and add to the pan followed by the stir fry sauce. Add the green onions, toasted peanuts, and sesame seeds but save some for garnish
9. Sauté for a couple of minutes, then plate the noodles. Garnish with the remaining peanuts, sesame seeds, and green onion

RECIPE
▪225g or 1/2lb thin spaghetti
▪salt
▪225g or 2.5c button mushrooms, halved and sliced
▪150g or 2c snow peas, cut into bite sized pieces
▪125g or 1 med carrot, julienned/shredded
▪150g/1 lrg red bell pepper, thinly sliced
▪4-6 scallions (root half only), chunky sliced
▪25g or 1.5-2 Tbsp ginger, grated
▪15g or 3-4 cloves garlic, grated
▪75-100g or 1 3/4c bean sprouts
▪20g or 1.5Tbsp high smoke point oil (avocado, peanut, canola, light olive, etc)
▪Stirfry sauce (recipe below)
▪Sesame seeds
Bring large pot of water to a boil. Add generous pinch salt and boil spaghetti until al dente. Cut veg. When pasta is done, drain and toss with high smoke point oil.
Preheat large nonstick skillet or wok over med-high heat then add long squeeze of high smoke point oil then mushrooms and pinch salt. Cook for about 3 min or until they’ve lost moisture and are taking on a golden color. Transfer mushrooms to a bowl.
Return pan to high heat and add another squeeze of oil, snow peas, bell pepper, and pinch of salt. Cook and stir for 60-90 seconds or until beginning to char, but still a bit crunchy. Add to bowl with mushrooms.
Return pan to high heat, add another long squeeze of oil followed by the spaghetti noodles. Stir fry for 2-3 min until well dehydrated on the outside. Once beginning to take on color, add ginger, garlic, scallions, and shredded carrot. Toss and stir fry until raw edge has cooked off of veg. Add back in mushrooms, peas, bell pepps, raw bean sprouts, and stir fry sauce. Stir and toss until sauce reduces to a glaze and everything is combined, about 1min.
Plate up and garnish with sesame seeds.
STIR FRY SAUCE - stir ingredients to combine
▪75g or 1/4c soy sauce
▪75g or 1/4c mirin
▪35g or 2.5Tbsp sesame oil
▪25g or 1.5Tbsp oyster sauce (or vegetarian hoisin)

Hong Kong Chow Mein (Hong Kong Style Fried Noodles)
Ingredients:
Serves 4 pax

80ml hot water
0.5 teaspoon sugar
2 tablespoons light soy sauce
2 tablespoons premium dark soy sauce
1 tablespoon oyster sauce

200g dried egg noodles
220g beansprouts (remove the head and tail)
3 cloves of chopped garlic
60g chives
A few dashes of white pepper
1 tablespoon sesame oil
Some toasted sesame seeds (optional)

Yaki Udon Noodle Sauce:
- 2 tablespoons dark soy sauce -29g
- 2 tablespoons oyster sauce - 28g
- 1 tablespoon mirin - 14g
- 2 tablespoons shirodashi- -24g
- 1 tablespoon rice wine vinegar -12g
- 2 tablesopons - 35g (we used palm sugar)
Stiry fry process:
- 1 lb udon noodles
- 1 cup sliced baby trumpet mushrooms - 99g
- 1/2 sweet onion, sliced into 3/4 in thick juliliened segments
- 1 cup rough chopped napa cabbage
- 3 green onions, cut into 1 inch segments
- 1/2 lb ground pork - 330g
- salt to taste
- white pepper to taste
- pinch of MSG
- 3 cloves garlic, finely chopped
- 3 tablespoons (42g) duck fat
- chili oil for topping *optional*
- bonito flakes for topping
- toasted sesame seeds for topping
- thin cut green onion on a bias for topping
