Under 10 Minute Dinner - Try this fresh and easy Shrimp & Cucumber Salad with Dill
Spring is hear and Chef Dylan is in the kitchen teaching us how to make a fresh and easy seafood dish that is uses local seafood and produce while keeping it light. This Shrimp & Cucumber Salad sandwich recipe is a must-try for a week day lunch, party, or quick side dish in a pinch.
Recipe
Ingredients:
For the Shrimp:
2 Lb. Shrimp, Peeled/Deveined/Tail Off/Split
½ Cup Dill, Chopped
½ Onion, Diced
1 Lemon, Halved
2 Tbsp. Garlic, Minced
1 Tbsp. Salt
½ Tbsp. Pepper
For Dressing:
1 Cup Dill, Chopped
1 Tbsp. Garlic, Minced
½ - 1 Cup Mayo (Depending on Taste)
½ Cup Sour Cream
½ Cup Greek Yogurt
1 Cup English Cucumber, Diced
(About 1 Cucumber)
¾ Cup Red Onion, Minced
1 Lemon, Zested
½ Tbsp. Sugar
Pinch of Salt and Pepper to taste
Preparation:
1. Place a sheet pan in the freezer to get cold.
2. In a large pot, add half gallon of water, dill, garlic, onion, whole lemon with juice, salt and pepper. Bring to a boil and then reduce to a simmer until the steam is fragrant.
3. Split the shrimp completely in half. Add the shrimp and turn heat off. Let shrimp cook until opaque.
4. Remove shrimp with a strainer spoon, and place onto the cold sheet pan and return to freezer to rapidly chill. Do not freeze shrimp.
5. To make the dressing, in a large bowl combine the dill, garlic, mayo, sour cream, yogurt, cucumber, onion, lemon zest, sugar, salt and pepper. Whisk to combine completely.
6. Remove the shrimp from the freezer and add to the dressing. Use a spatula to gently fold the shrimp and dressing together.
7. Serve on either lettuce wraps or your favorite bread. Enjoy!
Vietnamese Shrimp Cucumber Salad (Goi Tom Dua Leo)
Vietnamese Shrimp Salad (Goi Tom)
Ingredients
1 Daikon
4 Carrots
2 Cucumbers
1 Bunch Celery
1/2 cup minced Garlic
3 Tbsp. Oil
1 Onion
1/2 cup Vinegar
1 Tbsp. Soy Sauce
2 1/2 Tbsp. Sugar
1/2 lb. Shrimp
1/2 cup Dried Shrimp
Vietnamese Mint
Cilantro
3 Chinese Soup Spoon Fish Sauce
1/2 cup crushed Roast Peanuts
Salt
1 tsp. Oil (to stir-fry Dried Shrimp)
Optional
Shrimp Chips
Cut 1 Daikon, 4 Carrots, and 2 Cucumbers into thin pieces. Put each in a basket and sprinkle some Salt, mix and let it sit for 15 minutes.
After 15 minutes, rinse with water and squeeze out the access water. Put it back in the basket and set aside.
In a pan add in 1/2 cup minced Garlic and 3 Tbsp. Oil. Saute until crispy. Remove from heat and put the crispy Garlic into a bowl and set aside.
Slice 1 Onion and put in a bowl. Add in 1 Tbsp. Soy Sauce, 2 1/2 Tbsp. Sugar, and 1/2 cup Vinegar. Mix well.
Boil 1/2 lb. Shrimp, let it cool and remove the shell and cut it in half. Put in a bowl and set aside. In a small pan add in 1 tsp. Oil and 1/2 cup Dried Shrimp. Stir-fry and set aside.
Chop Vietnamese Mint and Cilantro and set aside. In a large bowl mix the Daikon, Cucumbers, Carrots, crispy Garlic, Onion Mixture, Shrimp, Dried Shrimp, Vietnamese Mint, and Cilantro.
Using a Chinese Soup Spoon, add in 3 spoons Dipping Fish Sauce. Add in 1/2 cup crushed Roast Peanuts. Mix well. Optional, fry Shrimp Chips to eat with salad.

Healthy & Easy Prawn Cucumber Salad Everyone Loves
Sharing my healthy and delicious crunchy cucumber prawn salad, so easy to make. All you need is a grated cucumber, some grated carrots, a handful of chopped coriander and prawns. Prawns have to be scalded in boiling water and then dumped into icy cold water to retain crunchiness. So easy that anyone can made. Sauce are also homemade. The ingredients are lime juice, finely chopped garlic, sesame oil, mushroom granules, some honey and soy sauce. Absolutely delicious!
