Pizza Bianco with Rosemary & Pancetta | Jamie Oliver
We all enjoy a good pizza and Jamie’s got a Pizza Bianco recipe that offers an alternative to the traditional tomato base we know and love. Cream cheese mixed with lemon, parmesan and garlic creates a white sauce that's topped with sliced potato, smoked pancetta and fragrant rosemary. Beautifully crisp this pizza is all white with us!

Make the PERFECT PIZZA at home - WHITE PIZZA/ PIZZA BIANCA
Hello Friends!
Our White Pizza/Pizza Bianca recipe is here! we made 2 different pizzas and we made the dough from scratch. It's has a nice crunchy crust and a soft inside. You can't miss this one out for sure!

INGREDIENTS:
FOR THE DOUGH:
2 cups lukewarm water (470 grams)
1 pinch sugar
1 1/2 tablespoons active dry yeast
2 tablespoons olive oil
5 1/4 cups all purpose flour or bread flour (680 grams)
1 1/2 teaspoons salt
FOR THE WHITE PIZZA:
1 pizza crust (homemade or store bought)
3/4 cup pancetta (chopped)
1 cup firm mozzarella (shredded)
1-2 tablespoons flaked fresh parmesan cheese (flake with a potato peeler)
1 cup fresh arugula ( if the leaves are large cut in half)
1-2 tablespoons olive oil

EASY High Hydration PIZZA BIANCA
This is what I ate when I was a kid. Just before going to school I used to go to the local deli (alimentari in italian), where they prepare this fragrant white pizza, oily on top and extremely crunchy at the bottom. The smell of bready dough was an absolute gift to the world. The deal was asking how much you wanted (1.000/2.000 lire at the time - yes I'm talking about the pre-euro era) would give you enough to feed you and a friend, then if you wanted to indulge, you could have asked them to cut it open and fill it: mozzarella, prosciutto, salami....you name it. But to my taste, the Queen of all: Mortadella. Do it like romans do.
This is my recipe for an authentic roman PIZZA BIANCA. It uses an 80% high hydration and a 14 hours minimum POOLISH for a super light crust and intense flavour.

200 gr FLOUR
200 gr WATER
0.6 | 1/8 tsp DRY YEAST
For the DOUGH
110 gr FLOUR
10 gr WHOLE WHEAT FLOUR
5 gr HONEY
8 gr SALT
60 gr SECOND WATER (to add slowly when the dough is already formed)
The WHITE pizza is baked for 12 - 15 min (depending on how crunchy you like it)

1️⃣ 00:00:52 - In the bowl of a stand mixer, combine yeast, sugar, salt, water, olive oil, and 5 cups of flour.
2️⃣ 00:01:25 - Knead on low until dough starts to come together. Continue kneading until the dough forms a nice, soft dough ball and the sides of the bowl are clean, adding more flour as necessary to achieve this texture.
3️⃣ 00:02:08 - Divide the dough into four to six equal pieces. Dust with flour and place on a baking sheet or large try. Cover and let rest 4 to 5 hours.
To Bake:
1️⃣ 00:03:06 - When ready to bake, roll dough into large circles. Place crust on a pizza pan or cornmeal dusted pizza peel. Top with desired toppings.
2️⃣ 00:03:58 - Bake pizza in a 550 degree oven on the pizza pan, or transfer the pizza from the pizza peel to a pizza stone. Bake until toppings are warm, bubbly, and browning.
