How To make General Tao Chicken
10 oz Chicken legs - bite sized
1 tb Minced fresh ginger
2 Scallions - 2 inch lengths
1 tb Minced garlic
2 tb Dried chilli peppers - whole
2 tb Sugar
2 tb Soy sauce
1 1/2 ts Rice vinegar
2 tb Cornstarch
1/4 c Chicken stock
1 ts Sesame oli
2 c Soya oil for cooking
Marinade 1 Egg white
1 tb Cornstarch
1 tb Soy sauce
1. Cut chicken into pieces no larger than 3/4 inch square. Combine marinade
ingredients in large bowl. Add chicken pieces and set aside for 2 hours. Add 2 T cornstarch to chicken stock, store in refridgerater. 2. In a deep pot, heat oil to 350 F. In a basket, or slotted spoon, lower several pieces of chicken into the oil. Fry until chicken becomes crisp (1 to 2 minutes) and test meat to ensure doneness. Continue doing several pieces at a time until all are cooked. 3. In a wok, on high heat, reheat 2 T reserved oil. Add prepared ginger, scallions, garlic, and chilies. Stir to prevent burning. Add the cooked chicken pieces, still stirring quickly. 4. Add sugar, soy sauce, vinegar, stock/cornstarch mixture and stir until thick. Remove from heat, stir in sesame oil, and place on serving dish. Serve with steamed rice.

This recipe is my version of General Tso's chicken. The white wine is optional, but does give a great element to the dish. I also left out 1 tsp of finely minced ginger, which I usually add. I will list it in the ingredients below. Please subscribe to Gochujang Mama for more recipes.
INGREDIENTS
1 to 1 1/2 of chicken breast
3/4 c all purpose flour
1 lg egg
2 tbsp corn starch
1 tbsp baking powder
1 tsp kosher salt
1/2 tsp onion powder
1/4 tsp garlic powder
3/4 c water
Sauce
1/2 c chicken broth
1/4c of duck sauce (apricot plum sauce)
3 tbsp dark soy sauce (you can also use 1/4 c reg. soy sauce)
2 tbsp honey (you can sub with sugar)
1 tbsp rice vinegar
1 1/2 tbsp white wine (optional)
2 tsp sesame oil
1/2 tbsp gochujang (1 tbsp if you like more spice)
2 tbsp corn starch
2 stalks of chopped green onion
1 minced clove of garlic
1 tsp of finely minced ginger

General Tso's can be more than the saccharine, gloopy sauce soaked into flabby, over-breaded chicken to which we've become accustomed. With just a little technique and a little love, the 45-minute wait for this takeout mainstay can be better spent making it yourself.

For the chicken and marinade:
2 egg whites
3 Tbsp dark soy sauce
3 Tbsp Chinese cooking wine
3 Tbsp vodka
1/4 tsp baking soda
3 Tbsp cornstarch
1 1/2 lbs boneless, skinless chicken thighs
+ For the breading:
1 cup all purpose flour
1 cup cornstarch
1 tsp baking powder
1 tsp salt
3 Tbsp reserved marinade
For the sauce:
4 Tbsp dark soy sauce
4 Tbsp Chinese cooking wine
3 Tbsp rice wine vinegar
4 Tbsp chicken stock
1/4 cup sugar
1 tsp roasted sesame oil
1 Tbsp cornstarch
6 scallions
4 cloves garlic
2 inch piece of ginger
6-12 arbol chiles (optional)
+ Special equipment:
Large pot deep enough for frying

For the Batter
1 egg
1/4 cup Corn starch
For Frying & Stir-fry
Frying oil
2 tsp. Chili oil with chili flakes
5 to 6 dried chili
