General Tso's Chicken

Ingredients
Chicken:
1 1/2 cups (335 grams) broccoli florets
1 1/2 quarts (1.8 liters) vegetable oil, plus 2 tablespoons (30 milliliters) for stir-frying
2 pounds (900 grams) boneless chicken thighs, cut into 1-inch (3-centimeter) dice
1 1/2 cups (335 grams) tempura flour, plus 1 cup (223 grams) for dredging
1 cup (240 milliliters) cold water
1/2 onion, cut into large dice
10 to 12 whole dried Thai chiles
1/2 tablespoon (8 grams) minced ginger root
1/2 tablespoon (5 grams) chopped garlic
Sauce:
1/2 cup (90 milliliters) oyster sauce
1 tablespoon (15 milliliters) hoisin sauce
1 tablespoon (15 milliliters) chili garlic sauce
1/2 cup (95 grams) sugar
6 tablespoons (90 milliliters) white vinegar
2 tablespoons (30 milliliters) soy sauce
1 tablespoon (7 grams) cornstarch mixed with 1 tablespoon (15 milliliters) water
1 drop red food coloring (optional)
3 scallions, sliced on the bias
Directions
For the chicken: Place your broccoli florets in a medium bowl and add 2 tablespoons water. Cover with plastic wrap and microwave for 2 minutes, until tender. Drain and set aside until ready to use.
Heat the oil in a 4-quart (3.8-liter) Dutch oven to 375 degrees F (190 degrees C) using a frying thermometer. Rinse the chicken in cold water and pat dry with paper towels. Mix 1 1/2 cups (335 grams) of the tempura flour and 1 cup (240 milliliters) water into a thick batter. It should look like thick pancake batter. Dredge the chicken cubes in the 1 cup (223 grams) of tempura flour and then coat them in the batter. Fry them in two batches until golden brown and crispy, 6 to 8 minutes. Drain the chicken on paper towels or a rack.
Heat a wok or large skillet to high and add 2 tablespoons (30 milliliters) of oil. When you see the first wisps of white smoke, stir in the fried chicken, onion, chiles, broccoli, and 1/3 of the ginger and garlic and cook them for about 30 seconds.
For the sauce: While the chicken cooks, add the oyster sauce, hoisin sauce, chili garlic sauce, sugar, white vinegar, soy sauce, cornstarch slurry, red food coloring if using, 1/3 cup water and the remaining chopped ginger and garlic into a 1-quart (946-millileter) saucepan and bring the heat up to medium. Whisk gently as it comes to a simmer. Allow it to simmer and keep whisking it for about 5 minutes, until the sauce thickens. Remove from the heat and reserve it.
Stir in the sauce and allow it to coat the chicken and simmer. Cook it, folding all the ingredients until they are well coated, about 2 minutes. Garnish with the scallions.

Ingredients for General Tso’s Chicken
(Tsp- Teaspoon; Tbsp- Tablespoon )
Chicken, boneless thigh pieces cubed- 450 gms (1 lb)
General Tso’s Sauce:
- Dark Soy Sauce- 1 tbsp
- Light (low sodium) Soy Sauce - 1 tbsp
- Rice Vinegar- 3 tbsp
- White Sugar- 3 tbsp
- Hoisin Sauce- 2 tbsp
- Water- 1/4 cup
- Corn Starch- 1 tbsp
For the Marination:
- Salt- 1/4 tsp
- Pepper powder- 1/4 tsp
- General Tso’s Sauce, prepared earlier- 2 tbsp
For Breading:
- Egg White, whisked- 4 tbsp
- All Purpose Flour- 1/2 US cup measure
- Corn Starch- 3/4 US cup measure
- Baking Soda- 1/4 tsp
- Salt- 1/4 tsp
Tempering:
- Oil- 1.5 tbsp
- Garlic cloves fine chopped -2 tbsp
- Ginger, finely chopped- 2 tbsp
- Red Chilli Flakes- 1-1.5 tsp
Other Ingredients:
- White Sesame Seeds- 1 tsp
- Oil for deep frying
- Preparation:
- Cut the boneless thigh into 1 inch pieces.
- Prepare General Tso’s Sauce by adding all the items mentioned. Give a mix well with a whisk making sure there are no lumps for the corn flour and the white sugar also has dissolved.
- Marinate the chicken pieces with 1/4 tsp each of salt, pepper powder and 2 tbsp US measure of the prepared General Tso’s Sauce. Mix and set aside for 30 mins.
Process:
- Add whisked egg white in the marinated chicken and mix it well.
- In another glass container, add the all purpose flour, corn flour, baking soda and salt. Mix it well.
- Take out the chicken pieces without the liquid and add 4-5 in batches in the dry batter mix.
- After adding all the chicken pieces, toss the pieces to coat these completely in the dry mix.
- Now, to fry the chicken pieces, heat oil in a pan/kadhai for deep frying on medium heat and drop these side by side to not crowd the pan.
- Do not stir for a minute. Now flip, stir and fry on medium heat for a total of 4-5 mins till light golden in colour.
- Remove and repeat for the balance.
- Heat oil in a wok and add the fine chopped ginger, garlic and red chilli flakes.
- Mix and sauté for around 1 min and then add the General Tso’s Sauce. Mix and cook for a minute or two on medium heat till the sauce starts to thicken.
- Now add the fried chicken pieces and mix and fry on medium heat for around 2 mins till the sauce totally coats the fried chicken pieces.
- Finally garnish with white sesame seeds and serve hot .

How to Make General Tso's Chicken
Ingredients
Base Sauce:
Chicken Stock Heated= 3 1/2 cup or 828 mL
Oyster Sauce=1/3 cup or 78 ml
Rice Wine= 1/2 cup or 118 ml
Hoisin Sauce=2 tbsp or 30 ml
Soy Sauce= 1 cup or 250 ml
Dark Soy Sauce= 1 tbsp or 14 ml
Sugar=1/3 cup or 40 g
Ginger= A small piece (minced)
Green Onion= Roots only (3 or 4)
Garlic= 2-3 cloves
General Tso's Sauce:
Sugar=2 cup or 610 g
Vinegar=1 cup or 264 ml
Chili Garlic Sauce or Sriracha=1/5 cup or 3 tbsp/ 48 ml
Sesame Oil=1/2 tbsp
Green Onion=A few
Garlic=2 cloves
Vegetable Oil
Sesame Seed (optional)
Sauce thicker:
Corn Starch/Potato Starch=1 tbsp
Water=2 tbsp
Breading:
Chicken thigh=1 lb or 454 gl
Salt=1/2 tbsp
White Pepper=1 tsp
Garlic Powder=1/2 tbsp
White Wine=1/8 cup or 30 ml
Egg= 1
Baking Soda= 1 tsp (optional)
Corn Starch=1/3 cup or 43g
Vegetable Oil=2 tbsp or 30 ml
Vegetable Oil: For frying
*For single serving sauce:*
Base Sauce/Brown Sauce: 1/2 cup
Sugar: 1/4 cup or 50 g
Vinegar: 2 tbsp
Chili Garlic Sauce/Sriracha: 1 tsp

Step 1: Base sauce
In a bowl, combine the ingredients for the base sauce together and set it aside for 15-20 min. The heated Chicken stock will extract the flavor from the ginger, garlic and green onions. After 15-20 min. strain the Base sauce and set it aside.
Step 3: General tsp's sauce
In a separate bowl, combine the sugar, vinegar, and chili garlic sauce. Pour in 3 1/2 cup or 828 mL of the base sauce
into the general tso's sauce.
Step 3: Batter
Cut the thigh or breast to about 1 inch or 2.5 cm in length and width. In a bowl combine the salt, garlic powder, white pepper, wine, and egg together and mix. Set it aside for about 20-30 min. in the fridge. After 20-30 min. add in 1/2 cup of corn starch and mix until you do not see the white corn starch powder. Once you do not see the white corn starch powder add in 2 tbsp of oil.
Step 4: Frying
In a pot or wok, heat the oil to 350F and add in the coated chicken one at a time using a fork. Fry for about 4-5 min or until golden brown. If you want crispier skin, fry for about another min. or so. Remove the chicken from the oil and drain on a paper towel or rack.
Step 5: Bring everything together.
In a wok or pan, add in 2 tbsp of veg, minced garlic and chopped green onions. Cook until fragrant, then add in 1 1/2 cup of general tso's sauce. Add in the thickener, 1 tbsp of potato starch/corn starch with 2 tbsp of water. Once the sauce thicken, add in the breaded fried chicken and mix. Lastly add in 1/2 tbsp of sesame oil for add fragrant.
Step 6: Plating
Plate your General tso's chicken with broccoli or other vegetables. Garnish with chopped green onions and/or sesame seeds. Served with rice or noodles.

General Tso's can be more than the saccharine, gloopy sauce soaked into flabby, over-breaded chicken to which we've become accustomed. With just a little technique and a little love, the 45-minute wait for this takeout mainstay can be better spent making it yourself.

For the chicken and marinade:
2 egg whites
3 Tbsp dark soy sauce
3 Tbsp Chinese cooking wine
3 Tbsp vodka
1/4 tsp baking soda
3 Tbsp cornstarch
1 1/2 lbs boneless, skinless chicken thighs
+ For the breading:
1 cup all purpose flour
1 cup cornstarch
1 tsp baking powder
1 tsp salt
3 Tbsp reserved marinade
For the sauce:
4 Tbsp dark soy sauce
4 Tbsp Chinese cooking wine
3 Tbsp rice wine vinegar
4 Tbsp chicken stock
1/4 cup sugar
1 tsp roasted sesame oil
1 Tbsp cornstarch
6 scallions
4 cloves garlic
2 inch piece of ginger
6-12 arbol chiles (optional)

EASY GENERAL TSO CHICKEN
General Tso Chicken is pretty simple and everyone has their own version. This is one of my versions of the dish. Sometimes I change things up a bit by adding Ginger wine to the marinade or batter frying the chicken or making it very crispy with a heavier coating AND double frying the chicken like I do my Korean chicken wings. Please remember to taste the sauce and adjust to your liking of savoury or sweet. Hope you enjoy! Happy cooking????
INGREDIENTS:
2 boneless chicken breasts/thighs, cubed
2 tsps Chinese wine (Shaoxing ideally)
2 tsps sesame oil
Seasoned cornstarch:
1/2 cup cornstarch
2 tsps onion powder
2 tsps garlic powder
1 tsp ginger powder
Salt and pepper
------------
Oil for frying (if frying the chicken)
1 tbsp Oil
4 or 5 dry red chilies(you may use the tiny ones. I used what I had at home ????)
4 cloves garlic minced finely
1 tbsp finely minced fresh ginger
----------
Sauce liquid mixture:
1/2 cup unsalted chicken broth
1 tsp hoisin sauce
1 1/2 - 2 tbsp soy sauce(the colour of your soy sauce will determine how dark your final sauce will be)
About 1/2 tbsp cornstarch
1/2 tbsp water
2 tsps Chinese cooking wine (Shaoxing ideally)
1/2 - 1 tbsp Rice Vinegar
3 tbsp Brown sugar (more or less)

Garnish:
Sesame Seeds (toast them if you desire)
Sliced green onions or chives
Best served with Rice and Steamed Broccoli or leafy greens
