1 Red Snapper
½ Red Bell Pepper
½ Green Bell Pepper
1 small Yellow Bell Pepper
1 Small Onion
3 Parsley
1 tsp Ginger and Garlic Paste( or Minced 3 cloves Garlic)
2 Cups Water
1 tsp All Spice
1 tsp Salt
½ tsp Blackpepper
1 tsp Thyme
1 tbsp Fish Seasoning( any Seasoning)
2 tbsp Ketchup( Optional)
2 Diced Tomatoes
1 tbsp Chilli Sauce ( Can use Habanero)
Butter and Cooking Oil

Ingredients:
Fish
olive oil
onion
garlic
1/2 cup white wine of choice
cup heavy cream
cup butter
salt / pepper / sugar to taste
►►Saute the onions and garlic for 5 minutes or so until soft.
►►Add wine and reduce 50%
►►Add equal parts heavy cream and butter.
►►Bring to a boil a least twice stirring constantly to avoid burning
Take off burner to cool and thicken
►►Spread over fish of choice, typically snappper like mutton, mangrove, yellowtail but also mahi, grouper, etc. Not recommend for denser fish such as tuna, cobia, wahoo.

Chad and Chef Justin cook up a sweet and spicy dish with a fresh recipe for pan seared Red Snapper.
Pan Seared Florida Red Snapper
Ingredients:
4 six ounce snapper fillets
Sea salt and fresh ground black pepper to taste
2 teaspoons olive oil
1/4 cup corn starch
Preparation:
In a large sauté pan, heat the olive oil over medium-high heat.
Lightly coat the skin side of each snapper fillet with corn starch.
Carefully add the coated snapper fillets to the oiled pan. Cook snapper fillets for 2 to 3 minutes on each side until completely cooked throughout.
Remove fillets from pan and serve with cucumber relish and yogurt sauce.
Cucumber Relish
Yield 4 Servings
Ingredients:
2 large Florida cucumbers, diced
2 large Florida tomatoes, seeded and diced
1/4 cup fresh parsley, chopped
2 tablespoons rice wine vinegar
1 tablespoon olive oil
Sea salt and fresh ground black pepper to taste
1 lemon, juiced
Preparation:
In a medium sized bowl, combine all ingredients and mix well.
Season the relish to taste with salt and pepper.
Yogurt Sauce
Yield 4 Servings
Ingredients:
1 cup Greek style yogurt
1 lemon, juiced
1 tablespoon seasoning mix (blackened or seafood spice)
Sea salt and fresh ground black pepper to taste
Preparation:
In a medium sized bowl, combine all ingredients and mix well.
Season the sauce to taste with salt and pepper.
