For today's foodspiration i'm featuring fig jam 2 ways! I'm first sharing a recipe for a fig & honey yogurt dip, which goes perfectly with Trader Joe's fig and olive crisps and would be a perfect addition to a charcuterie board. For dessert we have fig jam shortbread cookie cups.

In this video I show you how to make traditional Honey Cookies/Medovnicky/. They are similar to Gingerbread Cookies. Very tasty.

Honey Cookies
400 grams flour / about 3cups flour
160grams powdered sugar / 1 1/2 cup +1tbl sifted powdered sugar
70grams room temperature butter / 5tbl butter
1tsp baking soda
3tbl honey
2 eggs
1 1/2 tsp ground cinnamon(Saigon)
1/2tsp ground star anise
1/8 tsp to 1/4tsp cloves
1/8tsp to 1/4tspginger
pinch of salt
1egg-to make the egg wash, if using**
Use a stand mixer or you can make this dough by hand.
In a medium bowl, sift flour, baking soda, spices, salt
Add room temperature butter, honey and eggs, at first I use a wooden spoon to kind of incorporate wet ingredients into the dry ones. Then using hands I make the dough.
Wrap the dough, chill and let chill for one hour or overnight.
** using a fork or tiny whisk, break the egg until it gets foamy, at this point I like to strain the egg wash to get a really smooth egg wash
Preheat oven to 195-200C (390F)
Line your cookie sheets with parchment paper.
Roll the dough between 2 pieces of parchment paper, if needed very lightly flour your bottom parchment paper, roll the dough into approximately 3-5 mm thick (3/16 inch).
Bake for 6-8 minutes, depending on the size of cookies. Try to bake smaller shapes and larger shapes separately, smaller shapes will be baked before larger ones .Remove from the oven, let cool completely.

Butter 50gm (3 1/2tbsp)
Sugar 40Gm(3 1/4tbsp)
Honey 70gm (10tsp)
Egg 1
Flour 200gm (22 tbsp)
Baking Powder 1/2 tsp
Bake in preheated Oven 180℃ for 15-20 minutes.

Chocolate-Chestnut Tortelli (Christmas Cookies)

Ingredients
1 cup steamed or roasted chestnuts from a jar (about 6 ounces; not water chestnuts)
1/3 cup sugar
Pinch kosher salt
2 tablespoons amber rum
2 teaspoons unsweetened cocoa powder
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/8 teaspoon ground ginger
1/4 cup (about 1 1/2 ounces) mini semisweet chocolate chips
3 to 4 purchased refrigerated pie crusts (from two 14.1-ounce packages), at room temperature
1 large egg, beaten to blend
Powdered sugar, for dusting
Directions
Special equipment: a 3-inch round cookie cutter
Position a rack in the center of the oven and preheat to 425 degrees F. Line a large rimmed baking sheet with parchment paper.
Blend the chestnuts, sugar and salt in a food processor until the chestnuts are finely ground. Add the rum, cocoa, cinnamon, cloves and ginger. Blend until the filling is almost smooth, scraping down the work bowl as necessary. Add the chocolate chips and pulse until combined. (Can be made 2 days in advance).
Working with 1 pie crust at a time, unroll the pie crusts on a work surface and, using a 3-inch round cutter, cut out 10 rounds from each crust. Brush the pastry rounds with the beaten egg to cover. Drop 1 generous teaspoon of the filling into the center of each round. Fold half of the dough over the filling and seal to make a half-circle shape. Brush the top of the tortelli with the beaten egg. Place on the prepared baking sheet and bake until golden brown and crisp, 15 to 17 minutes.
Transfer to a rack and cool to room temperature. Dust with powdered sugar and serve.
