Spicy Shrimp Curry || Guyanese Bunjal Shrimp- Episode 23
This spicy shrimp curry is the perfect accompaniment to rice or roti. Today I made my curry thick with not a lot of gravy so that it could be eaten with some dhal and rice. As usual, I used a lot of pepper because to me curry needs to have good pepper. You may decide to add in potatoes to this curry, or even hardboiled eggs, but today I kept it simple and made the shrimp the star of the show. I hope you all enjoyed this one, and I will be posting more meat curries in the future.
Ingredients and Measurements:
1 lb. peeled and deveined shrimp (use whatever size shrimp you would like)
8 cloves of garlic
hot pepper (I used 1/4 a scotch bonnet, but you can use any type and however much you would like)
2 tbsp. curry powder
1 tbsp. masala
1 tsp. ground geera
1 small onion sliced
1 scallion sliced
oil
water to cook the curry
salt to taste

CURRY POWDER is a mixture of turmeric, chilli powder, ground coriander, ground cumin, ground ginger and pepper, and can be bought in mild, medium or hot strengths. Depending on your tolerance of heat, you can adjust the amount of spices that is already in the curry powder to enhance the flavors and suit your preferences.
Ingredients:
400g shrimps, peeled and deveined
1 tbsp curry powder
1/2 tsp ground black pepper
1/4 tp salt
2 red thai chilli, chopped
1 shallot, chopped
3 cloves garlic , chopped
2 tbsp ginger, minced
1/2 cup diced green bell pepper
1 cup coconut milk
handful fresh parsley
2 tbsp vegetable oil or coconut oil
Saute' the Curry powder for a quick 15-30 seconds to bring out and enhance all the spice flavors before you throw in your shrimp.
I highly recommend the brand Aroy-D (not sponsored) for the coconut milk, it is better than any other coconut brands in the market from my experience. If you have access to fresh coconut milk , even better!! Enjoy!
