A Harvest and Preserve Adventure (time to pickle!)
Follow me over the course of a few days as I harvest and preserve fresh garden treats; sugar snap peas, pickling cucumbers, and cucamelons. Can you count have many peas I snacked on? :) The second half of this video is a tutorial of my favorite refrigerated dill pickle recipe...it's worth giving it a try!
UPDATE 7/24/22: I pickled another batch (24lbs) of cucumbers and cucamelons the following weekend. As I was loading the new batch into the fridge, I gave the old jars a nice turn to get everythint all nice and mixed up. Mind you, I removed the BANDS when I put them in the fridge. Although sealed, they’re not super sealed with just the lids and one of the lids popped off, leaking pickle goodness everywhere…
My advice to you is that after you’ve let your pickles sit out overnight, store the pickles in the refrigerator with BOTH the LIDS and BANDS despite what I mentioned in the video. I recommend doing this since these are not water bath canned. For best flavor, allow a few weeks before enjoying.
Waiting for the garage to stop smelling like vinegar now… ☺️

How To Pickle Onions | Good Housekeeping UK
Make homemade pickled onions with Good Housekeeping simple step-by-step video.
Ingredients:
1.8kg (4lb) shallots or pickling onions
225g (8oz) salt
1.1 litre (2pint) malt vinegar
1. Pickling onions are only available in Autumn, so use shallots when not in season.
2. Peel shallots. Trim tops and root end from onions and put them into a roasting tray. Sprinkle salt over, making sure shallots are well coated. Leave overnight.
3. Wash salt off and dry with kitchen towel.4 Pack onions tightly into clean, sterilized jars. Pour over vinegar to fill jars. Check there are no air pockets and shallots are completely covered. Seal jars with vinegar proof lids. The onions will be ready to eat after about 3 months. Once opened store in fridge.

Pickle PERFECTION! Crunchy Dill Pickle Recipe For Beginners - Baby Dill & Hamburger Pickles
Dave's mums nickname is Picky, short for pickles. No idea why! She does like her pickles, though. Anyways, here's a very simple recipe to make two types of dill pickles. Sliced dill pickle chips (hamburger pickles), and whole baby dill pickles. We're using a product called pickle crisp in this recipe. It's a great ingredient, especially for beginner canners, to help make your pickles as crunchy as they should be. Minimal ingredients in this recipe make it a great canning recipe for beginner canners. Stuff your jars full, add the simple pickle brine recipe and water bath for 10 minutes for a shelf stable canned dill pickle. The thickness of the hamburger pickles is VERY important!
