6 Lime
cut into eighths
1 t Salt, pickling
3 tb Hot Pepper :
or less to taste
3 c Lemon juice
Place in jar. Keep at room temp or more for 3 weeks. Serve with bland or lamb meat dishes.

Instant homemade lemon pickle recipe - without using vinegar, without sugar, without jaggery - new method of making lemon pickle which has no bitterness, and is pleasant to eat. Stays good for many months if prepared, handled and stored the right way.
This recipe was passed down to me from my mom, who learnt it from her 80 year old neighbour, who has decades of experience making pickle in this method. So definitely, this method of making pickle will not go wrong.
Store bought pickles have excess salt and preservatives, so it is always healthy to have homemade pickles. And when you can make instant pickle in this way, why buy store bought pickles anymore!
The words Lemon and Lime are used interchangeably, so this recipe works for both lemon and lime. And this recipe also works for thick skinned lemon / lime! And you don't have to have sunlight to make this pickle. Just keeping them in kitchen corner works for this recipe. So anyone living in countries of cold weather can use use this recipe without any doubts.
This is an instant pickle recipe. Instant method works if the lemon / lime is thin skinned. You can consume them even on the first day. But, if your lemon / lime is thick skinned, you can wait for 3 - 5 days until the lemon / lime pickles well and turns soft. But still, if you don't mind the taste of thick skin, you can consume on the first day itself. But it is best to wait at least 1 - 2 days (both for thin and thick skin), as the lemon / lime takes time to absorb the pickling liquid and the pickle masala comes to the right consistency after 1 - 2 days.

MISSED TO MENTION IN VIDEO: After cutting the cooked lemon, please remove any seeds if you find them. Lemon seeds may make the pickle taste bitter.

Instant Lemon Pickle Recipe - Homemade lemon pickle - Spicy Lemon Pickle
Ingredients
10 to 15 nos lemons cut into small pieces
Cooking oil as needed
1 tsp mustard seeds
little bit of asafoetida
Salt as needed
1 tbsp chilli powder
Roasted mustard and fenugreek seeds powder
How to make lemon pickle
1. To a heated pan, add enough oil.
2. To the heated oil add 1 tsp mustard seeds and a little bit of asafoetida and let the mustard crack.
3. Now add the cut lemon pieces and add some salt as needed.
4. One the lemon has cooked enough add 1 tbsp of chilli powder and mix well
5. Prepare a powder with roasted mustard and fenugreek seeds in equal quantities and add 1 tbsp of this powder the pickle and mix well
6. Now the lemon pickle is ready to be served. You can preserve this lemon pickle in air tight container for up to 2 months.

825 gms lemons (washed)
450 ml vinegar
450 gms sugar
1 ginger
10 garlic cloves
5 Tbsp. kashmiri red chilli powder

water (to boil lemons)
Note: The pickle will be at its best after a couple of weeks maturing in the jar

Lemons 12
Salt 4 Tsp
Chilli powder 4 Tsp
Turmeric powder 1/2 tsp

LEMON GREEN CHILLI PICKLE
Ingredients
6-7 lemons
7-8 light green chillies
½ teaspoon turmeric powder
½ teaspoon dried fenugreek seeds
½ teaspoon mustard seeds
2 teaspoons salt
2 tablespoons sesame oil
1 teaspoon asafoetida (hing)
2 tablespoons roasted peanut powder
Method
1. Cut lemons into small pieces and put in a plate. Cut green chillies into 1 inch pieces and put in the same plate. Add turmeric powder and mix well. Sun-dry the mixture for 10-15 minutes.
2. Dry-roast dried fenugreek seeds for 30 seconds and transfer in a bowl.
3. Dry-roast mustard seeds in the same till it splutter. Transfer in the same bowl.
4. Dry-roast salt in the same pan for 30 seconds and transfer in the same bowl and mix well.
5. Heat sesame oil in the same pan. Remove from heat, add asafoetida and swirl. Add the roasted ingredients and mix well.
6. Add the oil mixture to sun-dried lemon-chilli mixture and mix. Add peanuts and mix well.
7. Serve or store in an air-tight jar.
