Super Easy Ginger & Sesame Oil Chicken • Chinese Chicken Stir Fry Recipe 麻油鸡 Chinese Cooking
This sesame oil chicken is a very easy recipe. So easy that anyone can whip out effortlessly. This dish is one of my favourite dishes--the smell of sesame oil and ginger is soooo divine. This is a popular dish for women on confinement because it is believed that the sesame oil and ginger plus the wine can help to expel 'cold’ and warm up the body. But no worries, you can eat this anytime even if you’re not on confinement. This super yummy dish is suitable for both men and women.

Ingredients:
Serves 6
Marinating the chicken
------------------
1 spring chicken (800-900g)
1.5 tablespoons of oyster sauce
2 tablespoons of Chinese cooking wine (Shaoxing Huatiao wine)
2 teaspoons of cornflour
Juice from 1 thumb size ginger (retain the pulp after juicing)
Putting the dish together
-------------
1/3 cup of sesame oil
2 thumb size ginger - smashed
3 cloves of garlic - minced
Pulp of juiced ginger (as above)
Marinated chicken
1 can of button mushrooms
1/3 cup of Chinese rice wine
Brine from a can of button mushrooms
2 tablespoons of low sodium light soya sauce
1 tablespoon of oyster sauce
2 tablespoons of premium dark soya sauce
0.5 teaspoon of chicken stock powder
1 teaspoon of sugar
Some cornstarch solution
1 tablespoon of Chinese cooking wine
The Perfect Crispy Sesame Chicken!

Sesame Chicken:
- 1 lb chicken thigh
- 1-2 cloves of garlic
- black pepper to taste
- 1.5 tsp of soy sauce
- 1/2 tsp of salt
- 3/8 tsp of baking soda
- 1 egg white
- 0.5 tbsp of starch (add it to the marinade)
- 1 cup of Potato starch (use it to coat the chicken)
- 2 cups of oil to fry the chicken
Ingredients for the sauce:
- 2 tbsp of Honey
- 2 tbsp of brown sugar
- 2 tbsp of Soy sauce
- 3 tbsp of water
- 3 tbsp of ketchup
- 1 tbsp of vinegar
- 2 tsp of potato starch mixed with 2 tsp of water
- 1/2 tbsp of sesame oil
- 1.5 tbsp of toasted sesame seeds
- Diced scallion as a garnish
1) Cut some boneless and skin on chicken into 1-inch (2,5-cm) size pieces.
2) Marinate the chicken with 1 tsp of grated garlic, 1 ½ tsp of soy sauce, ½ tsp of salt, some black pepper to taste, ⅜ tsp of baking soda, 1 egg white, 2 spring onion white, and ½ tbsp of potato starch. Mix everything until well combined. Cover it and let it sit for 1 hour.
3) For the coating sprinkle a tiny bit of water into the starch a few times, until some of the starch clumps up.
4) Give the chicken into the flourmix. Cover the meat with the other half of the starch. Shake off all the excess flour.
5) Heat up the oil to 380°F (193°C). Add in the chicken. After 2 minutes, you can feel that the surface is getting crispy and the color is slightly yellow. Take them out.
6) Let all the chicken rest for about 15 minutes and then double fry the chicken. In about 2 or 3 minutes, it will reach that beautiful golden color.
7) In a large bowl, add in 3 tbsp of brown sugar, 2 tbsp of liquid honey, 2 ½ tbsp of soy sauce, 2 ½ tbsp of ketchup, 3 tbsp of water, 1 tbsp of vinegar. Mix them well.
8) Put your pan/wok on the stove and pour all the sauce in. Keep stirring the sauce on medium heat. Bring it to a boil and pour in some potato starch water to thicken the sauce. Keep stirring until it reaches a thin syrup texture.
9) Add the chicken back into the pan/wok, along with 1 tbsp of sesame oil, 1 ½ tbsp of a toasted sesame seed. Garnish with diced scallions.
How to Make Chinese Sesame Chicken | Get the Dish
Although a traditionally asian dish, sesame chicken has become a staple in our dine-in/take-out diets! Who doesn't love the crunchy exterior mixed with that amazing sesame flavor? And now you don't have to make a run to Panda Express or call in a delivery! You can make this delicious dish at home!
RECIPE:
Sesame Chicken
From Brown Eyed Baker (
For the marinade:
1 cup chicken stock
1/2 cup soy sauce
1/4 cup honey
1/4 cup rice wine vinegar
3 tablespoons brown sugar, packed
2 tablespoons cornstarch
1 tablespoon sesame oil
1/2 cup water
1 1/2 pounds boneless, skinless chicken breast, cut into chunks
For the sesame chicken:
Marinated chicken
1 tablespoon sesame oil
2 garlic cloves, minced
1 tablespoon fresh ginger, grated
1 teaspoon chili paste
1 1/2 cups cornstarch
1/2 cup flour
1/2 teaspoon baking soda
3 egg whites, beaten
Canola oil, for frying
1 teaspoon sesame seeds, for garnish
1 bunch green onions, chopped for garnish
Red ginger, for garnish
Cilantro sprigs, for garnish
To make the marinade: Whisk together stock, soy sauce, honey, rice wine vinegar, brown sugar, cornstarch,sesame oil, and 1/2 cup water in a large bowl.
In a large bowl, combine 6 tablespoons of the marinade with the chicken and marinate for at least 30 minutes. Drain chicken, dry carefully and discard the marinade in the bowl.
To make the chicken: Heat sesame oil in a medium saucepan over medium heat. Add garlic, ginger, chili paste, and cook, stirring frequently, until fragrant. About 1 to 2 minutes. Add 2 cups of the marinade and continue cooking for about 3 to 4 minutes, or until the sauce has slightly thickened.
In a large bowl combine cornstarch, flour, baking soda, and remaining marinade until it resembles a coarse meal.
Dip chicken first into the egg whites, and then dredge in the cornstarch flour mixture, pressing to coat.
Heat oil in a large heavy bottomed stock pot until it reaches approximately 350ºF or a pinch of flour thrown in starts to simmer and fry. Add chicken and fry until golden brown, approximately 2 to 3 minutes. Drain on paper towels.
Toss chicken in warmed sauce and serve immediately garnished with sesame seeds, green onions, red ginger, and cilantro sprigs.
