How To make Chinese: General Tsao's Chicken 1
1 lb Boneless chicken breasts cut
-into 1 in pieces 3 tb Soy suace
3 tb Cornstarch
1 Egg white beaten until
-frothy 1 c Veg. oil
3 Hot dried chili peppers,
-broken in half 2 Cloves garlic finely chopped
1 Piece ginger root (1 in)
-peeled and finely chopped 1 tb White wine vinegar
1 tb White wine
1 ts Cornstarch
1 ts Sesame oil
1/2 ts Salt
1 ts Brown sugar
Wow, with over a dozen Chinese or Oriental cookbooks, I had a hard time finding this recipe! It is probably called something else (like spicy fried chicken) and I really do have a dozen recipes. :) This one is from _Elegant_ Entertaining_Cookbook_ by Myra Sable of Sable and Rosenfeld, Bantam books. General Tsao was a real person, general and poet who lived in China 155-220 AD. rn e in the frig for 1 hour. Heat the oil in a wok. Deep fry the chicken, a few pieces at a time, about 1 minute or until golden brown. Remove and drain on paper towels. Pour all
but 2 TB of the oil out of the wok. To the oil in the wok, add the chili peppers, garlic and ginger, stir-fry 2 minutes. In a small bowl, combine the remaining soy sauce, vinegar, white wine and 1 tea cornstarch, mix until smooth. Stir in sugar, sesame oil and salt. Pour into wok, cook, stirring for 2 minutes until thickened. Return chicken pieces to wok, mix well and serve.

Here is the recipe:
Ingredients
3 lbs boneless skinless chicken breasts, cut into chunks
2 cups green onions, sliced
8 small dried chilies, seeds removed ( bird pepper or thai chilies are good)
Cornstarch slurry:
1/4 cup soy sauce, low sodium preferred
1 egg, beaten
1 cup cornstarch
Sauce:
1/2 cup cornstarch
1/4 cup water
1 1/2 teaspoons fresh garlic, minced
3/4 cup sugar
1/2 cup soy sauce
1/4 cup white vinegar
1/4 cup sherry wine or 1/4 cup white wine
14 1/2 ounces chicken broth ( a can)
Directions
Place sauce ingredients in a quart jar with a lid and shake to mix. If you make this ahead of time just refrigerate until needed, shaking it again when you are ready to use it. This also keeps your dirty dishes down.
Mix cornstarch slurry in a large bowl- the mixture will be strange but trust me it works. It will be VERY thick almost paste like. Add chicken pieces to coat. Using a fork remove ONE chicken piece at a time and let the excess mixture drip off. YES even though the mixture has a weird consistency it will not stick like paste and the excess will drip off.
heat oil in a deep fryer to 350 degrees or just use a thick skillet and fill with oil 3/4 of the way. Get oil hot.
Drop chicken pieces into the hot oil. pull out when coating is light golden brown. Set aside on paper towels.
pour out all the oil and just leave a little to coat the bottom of skillet. Saute the green onions and peppers in the oil for 1 minute.
Get Sauce mixture and shake/mix well again. Pour mixture into skillet until thickens. When it thickens be ready. it happens out of nowhere. so be ready and stirring. once it thickens turn off flame. drop in chicken and stir the chicken in the sauce glaze. Plate and eat. Enjoy.

Marinade for the Chicken

1 tsp. Baking soda
1/4 tsp. Black pepper
2 tsp. Shaoxing wine (Chinese cooking wine)
For the Sauce
2 Tbs. Sugar
1 Tbs. Sambal
1 Tbs. Soy sauce
3 Tbs. White vinegar

1/4 cup Chicken stock
1 tsp. Corn starch
For the Batter
1 egg
1/4 cup Corn starch
For Frying & Stir-fry
Frying oil
2 tsp. Chili oil with chili flakes
5 to 6 dried chili
4 Cloves garlic, roughly chopped

Brief History: Because of the name, I did a little digging, and it came from chefs that left China and moved to the United States in the late mid 1900s. The General Tso's chicken dish has references to hunanese dishes. The General Tso's Chicken dish doesn't have any proof of connection yet to the general. Its a sweet and spicy dish.
Addtional info: I just watched a documentary on search for general tso on netflix and found that the first original recipe came from Chef Peng from the hunan area that moved to Taiwan and thats where it first originated from. However, general tso's dish has evolved from peng's orginal recipe where in america, we added sugar to the recipe.

General Tso's Chicken Recipe:
For the Marination:
Chicken Thigh Boneless (Cubed) - ½ kg
Cornflour - ½ Cup
Salt - ½ tsp
Soda Water - ¼ Cup
Egg - 1 no
Black Pepper Powder - ½ tsp
Garlic (Minced) - 1 tsp
Soy Sauce - 1 tsp
Oil - For Deep Frying
For the Stir Fry:
Soy Sauce - 1 tbsp
Oyster Sauce - 1 tbsp
Honey - 2 tbsp
Garlic (minced) - 2 tbsp
Ginger (minced) - ¾ tbsp
Celery(minced) - 1 tbsp
Spring Onion White - 3 nos
Dry Red Chillies - 4 nos
Oil - 3 tbsp
Water + Corn Flour - 1 tbsp + ½ tsp
Salt - ¼ tsp
Pepper - ¼ tsp
Vinegar - 1 tbsp
Water - ½ Cup
For Garnish:
Spring Onion Greens - 1 tbsp
Sesame Seeds - ½ tbsp
Instructions:
1. In a mixing bowl add all the ingredients for the marination and mix thoroughly
2. Let it sit for 30 minutes, Deep fry the chicken for 2-3 minutes on moderate flame, and remove from the heat
3. Increase the flame to high, let the oil heat up then double fry until crispy and cooked through and set aside.
4. In a pan pour oil and saute spring onion whites, ginger, garlic and celery and saute until aromatic.
5. Add the honey, oyster sauce, vinegar and soy sauce and let it cook for 30 seconds on a high heat.
6. Add salt and pepper, pour the cornstarch slurry and let it thicken.
7. Add the fried chicken and toss. Garnish with spring onion green and sesame seeds.
