How To make Chicken In Wine
3 pounds breasts and thighs
salt and pepper 2 tablespoons butter
1 medium onion
sliced
1 4 oz can sliced mushrooms :
drained
1/2 cup dry sherry
1 teaspoon Italian seasoning
fluffy rice
Rinse chicken parts and pat dry. Season chicken lightly with salt and pepper. In skillet, melt butter and quickly brown chicken parts; remove with slotted s poon and place in Crock-Pot. Saute onion and mushrooms in skillet. Add sherry to skillet and stir, scraping to remove brown particles. Pour contents of ski llet into Crock-Pot over chicken. Sprinkle with Italian seasoning. Cover and cook on Low for 8 to 10 hours or on High for 3 to 4 hours.
Serve chicken over fluffy rice and spoon sauce over top. Serves 4 to 6

A crispy chicken with an amazing tasty tarragon sauce. The sauce is made from chicken stock, red wine vinegar, shallots, garlic and dried tarragon herbs. It's emulsified with butter for that smooth, creamy buttery flavour. The beauty of this chicken is that it gently cooks in the sauce, rendering it tasty and staying juicy while the skin on top roasts into a beautiful crisp. It's quite simple to make but please buy a whole chicken and make the stock yourself. You will have plenty left over, so freeze it for your next dish. If you don't have time then cut corners, it will still be an awesome chicken. Enjoy my Crispy Chicken in red wine vinegar or as known in France, Poulet au vinaigre de vin.

Pan-Fried Chicken in a Creamy White Wine & Garlic Sauce
This is my pan-fried chicken in a creamy white wine and garlic sauce with mushrooms. Ready in 25 minutes it makes a tasty and impressive date night dinner or a lovely alternative to a Sunday roast.
I love this for a luxury dinner served with sauteed potatoes and greens.

Ingredients for the creamy chicken:
4 chicken breasts
½ tsp salt
½ tsp pepper
2 tbsp vegetable oil
8 chestnut mushrooms - sliced
1 small onion - peeled and chopped finely
3 cloves garlic - peeled and minced
¼ tsp dried thyme - or 2 sprigs fresh thyme
½ cup (120ml) white wine
½ cup (120ml) chicken stock
¾ cup (180 ml) double/heavy cream
To Serve:
Saute potatoes
Steamed green beans
Fresh thyme
Method:
Season both sides of the chicken breasts with the salt and pepper.
Heat the oil on a large frying pan (skillet) over a medium/high heat.
Add the chicken breasts to the pan and cook on both sides until golden (about 6-8 minutes). They don’t need to be cooked through at this point – they’ll continue cooking in the sauce.
Add the onion and mushrooms to the pan and cook for 3 minutes, until lightly softened.
Stir in the garlic and thyme and cook for the 30 seconds.
Add the wine and turn up the heat to high. Bring to the boil, then simmer until almost all of the liquid has evaporated (this will take about 5 minutes).
Stir in the stock and cream and heat through for 2-3 minutes.
Turn off the heat and place the chicken breasts on 4 plates. Spoon over the sauce and serve with your choice of sides (I love green beans and sauté potatoes with this dish).
Sprinkle over the fresh thyme and serve.

CHICKEN IN RED WINE / RED WINE CHICKEN / COOK YOUR CHICKEN IN RED WINE
CHICKEN IN RED WINE
Ingredients
1/2 kg Chicken cut into medium size pieces with bones
1 teaspoon cumin powder
1 teaspoon Red Chillie Powder
2 teaspoons garlic and ginger paste
2 or 3 onions sliced
1/2 teaspoon ground mustard
1 teaspoon ground pepper
1 teaspoon sugar
2 tablespoons oil
1/2 cup or about 4 tablespoons red wine
Salt to taste
Marinate the chicken with all the above ingredients for about one hour. Transfer to a suitable pan and simmer on low heat till the chicken is tender and the gravy is thick.
If desired, Just before serving add 2 teaspoons butter and mix well.
Serve with mashed potatoes, steamed veggies and either bread, rice, chapattis
