Roasted Sweet Potatoes
RECIPE: Hi Guys, today I’ll show you How to Make Roasted Sweet Potatoes. With just a few ingredients. Here’s an easy side dish especially for Thanksgiving and it tastes great. If you want to take a break from the sugary sweet potato dishes, this savory and healthy recipe is perfect. You can even make it the day before and reheat it.
It’s 35 degrees outside/1.6 celsius, really cold and I just picked all these herbs from my garden. They smell amazing. It reminds me of summer when I can actually go out and garden. These are all winter hardy so if you’re looking for something easy to grow almost all year around, herbs are a great choice. Parsley, sage, rosemary and thyme. You can use any or all of these herbs. Of course you can use dried herbs if you don’t have fresh. Dried parsley is not necessary because it has hardly any flavor. Sage, rosemary and thyme are wonderful dried.
Sweet potatoes come in different colors and sizes. Really any variety is fine. These are both orange inside and the most common in grocery stores. I like to roast onion along with the potatoes, it adds a little something extra. This is a big red onion, a yellow onion is fine or even a sweet onion like Vidalia.
We’ll need a sheet tray or shallow dish to cook the potatoes and some oil, salt and pepper. And that’s it for the ingredients.
First, heat your oven to 425 degrees F or 218 degrees C.
Peel the potatoes. Cut them into 1 inch cubes. Put them in a big bowl. For the fresh sage leaves, stack them and slice them thinly and finely chop. The thyme leaves come right off the stem. Finely chop them as well. Rosemary is a very strong herb so we don’t need too much.
The parsley, we’ll use at the end. The rest of the herbs are in the bowl with the sweet potatoes. Add salt, ground black pepper, and oil, you can use olive oil or vegetable oil. Mix it up really well. Spread the potatoes evenly on the sheet tray. The red onion, I’ve cut into 1 inch pieces. Just put them right into the same bowl that you had the potatoes in. Whatever seasoning left in the bowl is enough for the onions. A little oil and just mix it up. Put them in a small dish. Both the potatoes and onions go into the heated oven for 20 minutes. After 20 minutes, stir the potatoes, taste and add more salt if you like. If the potatoes look dry, add a little more oil and mix. Back into the oven for 10 minutes until cooked through. Same with the onions, stir and cook for a few more minutes in the oven. You might be thinking why I don’t put the onions and potatoes together on the same tray. Because the onions have a lot of moisture, I don’t want the potatoes to get steamed. They get nicely roasted by themselves. Plus there won’t be enough room on a sheet tray for the onions and potatoes.

Savory Roasted Sweet Potatoes
Savory roasted sweet potatoes are totally comforting and satisfy your savory cravings when weather turns cold. Easy and healthy side dish that you can make and pair with any meal.
Prep Time: 15 minutes
Cook Time: 42 - 45 minutes
Servings: 6
Ingredients
3 large sweet potatoes, peeled and cut into 2 inch cubes
4 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon chili powder, use cayenne for substitutions
¾ teaspoon salt
¼ teaspoon ground pepper
Fresh chopped parsley for garnish
Instructions:
To peel or not to peel skin off potatoes depends on personal preference. Of you decide to peel, scrub potatoes and rinse it well under tap water. Peel the skin off. Trim the edges.
Cut potatoes into half lengthwise.
Cut each half into 3 to 4 long wedges.
Note: if you plan to make roasted sweet potato wedges, you can cut into thin wedges length wise and then cut them in the middle so your wedges are finger length size.
Cut equal sized cubes. Make sure they are all even size for uniform cooking. Cut them as small as ½ inch cubes to as chunky as 2 inch cubes. You choose!
Transfer cut potatoes onto a baking sheet.
Drizzle generous amount of olive oil over the potatoes.
Add in all the spices along with salt and ground pepper.
Mix well to coat even.
Jo’s Tip: Use your finger to mix in the spices into the potatoes. It ensures each potato piece is evenly coated.
Arrange it in a single layer.
Roast in pre-heated oven at 425 degree Fahrenheit for 45 – 55 minutes, tossing the sweet potatoes every 10 -15 minutes to prevent it from burning and to get even cook and caramelization on every piece.
Remove from oven. Garnish with fresh parsley.
Serve immediately with your favorite dish.

Delicious and super-easy-to-make oven roasted sweet potatoes made with fresh herbs and butter! This dish will fill our kitchen with amazing aroma and will be gone in minutes; my favorite side dish!
Peeled, cubed sweet potatoes
salt, fresh ground black pepper
fresh thyme, fresh rosemary
dried basil, garlic powder, smoked paprika
butter, 1 tablespoon per potato
avocado oil or olive oil, 1 tablespoon per potato
INSTRUCTIONS
1. There are two different ways of preparing oven-roasted sweet potatoes. The first method is the one I used in my video recipe, which involves cooking the potatoes first, then seasoning them with butter and spices. This method works well if you need the sweet potatoes to be extra soft. Preheat oven to 350F. Place sweet potatoes into large pot filled with water. Bring to a simmer and cook for 8 to 10 minutes, just until the potatoes start to become tender. Drain water.
2. Toss together potatoes with melted butter and oil, herbs, salt and black pepper. Bake in preheated oven until fork-tender and golden brown, about 15 to 18 minutes. Broil for a few minutes on high heat to make the potatoes extra golden. Remove and transfer into serving bowl.
3. Method 2: The second method and the one I currently use requires less work. Just spread the raw sweet potatoes onto a baking sheet. Pour butter or olive oil over the potatoes, then add the seasonings, toss everything together and cover the pan with foil! Set your oven to 425F and roast the sweet potatoes covered for about 20 minutes, then remove the foil and bake for another 10 minutes. For more color, broil under high temperature for a few minutes.
