How To make Chilled Beet and Cucumber Soup
1 1/2 Lb. cooked beets
peeled
2 Large cucumbers :
peeled, halved
lengthwise 2 Bunches spring onions (white and green part)
4 Tbsp. chopped parsley
4 oranges
2 Tbsp. red wine vinegar
3 C. or more chicken stock -- chilled
salt and freshly ground black pepper to taste dollop salted whipped cream or sour cream per serving
Steam or gently boil the beets about 15 minutes. When done, grate them on the coarse side of a grater. Remove the seeds from the cucumbers. Grate on the coarse side of the grater. Chop the green onions. Juice the oranges and grate the rind of 3 oranges. Put the beets, cucumbers, orange rind and juice and 2 cups cold chicken stock into a large mixing bowl. Puree in a blender, in batches, until smooth. Chill for at least 3 hours before serving. Add more chicken stock to correct the consistency after chilling. To serve, ladle into chilled soup bowls. Garnish with salted whipped cream or sour cream.

Serving Size: 5 Cups
Ingredients:
-1 small clove garlic
-¼ cup shallot, roughly chopped
-⅓ cup dill, roughly chopped
-⅓ cup parsley, roughly chopped
-1 ½ cups (~12 oz) whole milk greek yogurt
-1 lemon, juiced
-¼ cup olive oil
-1 ¼ tsp salt
-2 large english cucumbers, halved and seeded - 1 cup finely diced for garnish and the rest chunked
-¼ cup red onion, finely diced for garnish
Instructions:
-In a small bowl mix the finely diced cucumber and red onion.
-Add everything EXCEPT the finely diced cucumber and red onion garnish to a blender and blend until smooth.
-Garnish with cucumber and red onion mixture.
-Add salt to taste.
The soup will taste better after sitting for a couple hours or overnight.

Heck yea! Cold soup is amazing on a hot summer day.
Other examples of cold soups include gazpacho (fresh summer tomatoes), vichyssoise (cold potato and leek soup) and cantaloupe or melon soup. All cold soup recipes are completely refreshing on a hot day.
Cold Cucumber Dill Soup Tips:
Cucumber soup can be used with any yogurt. Having said that, I prefer to use a plain Greek yogurt with 5% fat to maximize flavor and creamy texture.
Vegans can substitute their preferred vegan plain yogurt blend.
Don't have dill or parsley but another herb? Cool - try cucumber soup with basil, tarragon, mint, whatever!
Don't have shallots? No problem - use a little bit of regular white or yellow onion. Shallots are a wee bit milder so consider using a wee bit less than what this cucumber soup recipe calls for.
PRO TIP: Blenders work best if the heavier ingredients (i.e. cucumbers) are on the top. The weight helps push everything else down to blend it easier and faster.

The inspiration for this Cold Polish Cucumber soup with croutons in Polish Chłodnik z Ogórka z grzankami came to me thanks to my amazing friends. In this video I use home grown vegetables that I got from my friends to make this refreshing, fulfilling soup.
Soup is full of home grown cucumbers, zucchini, and peppers, with a lot of polish flavors like chives, dill, radishes. To add some texture and flavor I also show you how to make your own croutons.
INGREDIENTS
Soup:
2 cloves of garlic (chopped)
fresh dill (chopped)
fresh scallions (chopped)
fresh chives (chopped)
3 radishes (finely slices for garnish)
1 small chili pepper (chopped, 1/2 goes into the soup)
1 small cubanella pepper (chopped)
1 cucumber (grated)
1 zucchini (grated)
1 yellow squash (grated)
1 cup of greek yogurt
2 cups of kefir
salt & pepper
Croutons:
2 slices of bread of you choice (chopped 1 inch) here I use spelt bread
1/2 chili pepper
salt & pepper
olive oil
cayenne pepper

ककड़ी का ठंडा सूप को बनाना काफी आसान है। यह गर्मी के दिनों में बेहद फायदेमंद होता है। यह भूख बढ़ाने में मदद करता है। खीरा और शिमला मिर्च इसकी पौष्टिकता और बढ़ा देते हैं। तो आइए बनाते हैं कोल्ड कुकम्बर सूप।

5 लोगों के लिए आवश्यक सामग्री
दो कप खीरे क्यूबिक साइज में कटे हुए
½ कप बारीक कटा हुआ खीरा
¼ कप दही
दो चम्मच मक्खन
एक चम्मच कटी हुई शिमला मिर्च
नमक स्वादानुसार
सजाने के लिये
पुदीने की पत्तियां
काली मिर्च स्वादानुसार
विधि
एक पैन में 1 ½ कप पानी लेकर खीरे को उबाल लें। खीरे जब नरम हो जाएं तो इसे ठंडा करने के लिए रख दें।
अब इन बॉयल्ड खीरों को मिक्सी में डालकर दूध और दही डालें। साथ में थोड़ा सा नमक डालें और इसे मिक्सी में चलाएं।
अब पैन में मक्खन को पिघला लें। बारीक कटे हुए खीरे और शिमला मिर्च को इसमें डालें और दो मिनट के लिए फ्राइ करें।
अब मिक्सी में बने हुए सूप को इसमें मिला दें। इसे दो मिनट तक पकाएं। इसके बाद इसे थोड़ा ठंडा होने दें और 30 मिनट के लिए फ्रीज में रख लें। लीजिए तैयार है हमारा कुकम्बर सूप। इसे पुदीने की पत्तियां और काली से सजाकर सर्व करें।
