2 Onions, minced 2 Cloves garlic, chopped 1 ts Olive oil 4 c Chopped plum tomatoes 1 c Diced sweet red peppers 1/4 c Diced celery 2 tb Chopped green chilies 2 c Stock 2 ts Fresh dill, chopped 2 tb Chopped fresh cilantro 1/2 ts Cayenne 1/4 ts Cumin Combine all ingredients except dill, cilantro, cumin, cayenne & salt. Bring to a boil & simmer for 25 minutes. Let cool slightly, then puree. Stir in remaining ingredients with some salt & pepper. Serve warmed or chilled. Nava Atlas, "Vegetariana"

Potato & Dill Soup | LOW CALORIE DENSITY RECIPE
It's tasty, it's nutritious AND it's a LOW CALORIE DENSITY meal. Simply put, it's Sundness in a nutshell!
This soup pays tribute to the lovely combination of potato and dill. It's a combination I grew up with in Scandinavia and a combination I've missed much more than I realised.
I suggest to use all of the ingredients used in the video. Although nutritional yeast isn't a calorie density ingredient the small amount in this soup won't make a discernible impact on calories while it will enhance the taste of the soup itself.

Tomato dill soup topped with balsamic roasted mushrooms
Soup season is here and it’s so comforting on those chilly days
Ingredients
11 roasted Roma tomatoes 1 can coconut milk 2 cups veggie broth 1 tbs dried sage Handfuls fresh dill 1 tbs dried dill 1 tbs rubbed sage 1 tbs oregano 1/4 tsp or more cayenne 1 tsp coconut sugar 1 tbs lemon juice 1 chopped onion 1 chopped green apple 3 cloves garlic chopped Salt pepper to taste Chopped pistachios for topping
Roasted tomatoes
Bake tomatoes for 40 minutes at 425F. Once cooled, remove skins.
Cook onions, apple, garlic, and fresh dill for 5 minutes. Add spices and cook for a couple minutes.
Add cooled cooked onion, apple, dill, tomatoes, and garlic to blender and blend with veggie broth. Blend to a homogeneous mixture. Add mixture to sauce pan, add coconut milk, coconut sugar and cook for a few minutes. Once cooked add lemon juice.
Balsamic mushrooms
10 mushrooms of choice 1-2 tbs balsamic vinaigrette 1-2 tsp coconut aminos Salt and pepper to taste
Cut mushrooms length wise. Dry Sauté for a couple minutes, add balsamic vinaigrette and coconut aminos. Cook for a couple minutes. Add salt and pepper to taste.
When my wife offered me soup, I thought it was going to be boring but this variation of Tomato Carrot Dill Soup was a refreshing change.
Served steaming hot, this soup livens up your dinner or lunch. Its filling enough but complements real well with garlic bread. Our daughter loves it with croutons but you can garnish it with any bread crumbs.
