Potato Latkes

Ingredients
2 large baking potatoes
1 extra-large egg, whisked
3 tablespoons all-purpose flour
1 1/4 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper
3 tablespoons clarified butter
Directions
Peel the potatoes and grate them on a box grater. Wrap the grated potatoes in a kitchen towel and squeeze out as much liquid as possible. Combine the potatoes in a bowl with the egg, flour, salt and pepper. Mix well.
Melt the clarified butter in a large saute pan over medium heat. Place a tablespoon of the potato mixture into the sizzling butter and cook for 2 minutes. Turn the pancakes over and cook for another 2 minutes, or until crisp on the outside and golden brown. Serve the pancakes hot from the skillet.
Cook's Note
To make the clarified butter, slowly melt 4 tablespoons butter in a small saucepan. Set it aside until the milk solids settle. Spoon off any solids that rise, then carefully pour off the golden liquid, discarding the milky part in the bottom of the pan.

Are you ready to make some homemade baby food? Today's recipe is cinnamon sweet potatoes and it's so yummy that you're going to have to stop yourself from stealing the baby's lunch!
VIDEO TRANSCRIPT - Homemade Baby Food - Cinnamon Sweet Potatoes
Today because it's fall we're gonna make some baby food actually toddler food he just turned two. This is fall inspired, super healthy, nothing in here you wouldn't want your baby eating. So we need sweet potatoes, applesauce and cinnamon this recipe is that simple. Modern homemakers video intro and theme song.
So once you've rinsed the sweet potato you can peel them if you want I'm just gonna peel of the skin after they're boiled that's easier to me I'll show you how I do it, but you can peel it before if you want. If they're organic you don't have to do anything but guess who can't afford that! Anyway take your knife, and you don't have to do this but it makes the cooking time a lot faster. I'm just gonna cut four pieces depending on the size of your sweet potato you might want to cut more and then we're going to add this to our pan.
I'm gonna do my whole bag and then I'll add water to cover that. I've got it on high I added water, you know just to cover them. Ok, this took my potatoes an hour, lots of variables depending on size and whatever and you can see I put a fork in and it just goes right in they're almost like falling apart. So that is how you know when they're done. So I'm going to let them cool down, it's actually late at night for me, I'm going to let them cool down and then put them in the fridge and I'll do the next step later.
Mine was a 3 pound bag of sweet potatoes, but one of them was yucky so it ended up only being about four or five small sweet potatoes. So I let these cool overnight so they're not going to hurt me. If you peeled them already you're done. But if you were lik me and you were like ahhh I don't want to peel them all you have to do is go like this and the skin comes right off, just take your finger and drag it along.
Once you've taken the skin off I'm going to add it to my, I have a vitamix, but whatever blender you have to work with so just get the skin off of all of those and start putting them in. I forgot to point out do not drain this liquid that's in here with your potatoes. If we need to make things thinner for a younger baby or to fit through our awesome pouches that is the water you want to use. You don't want to just go get tap water when you have this water that is full of potato vitamins.
OK mommies you know my pet peeve about corn syrup in applesauce, so please check your ingredients this is Kroger store brand is one of the few it says natural I think the traditional is full of corn syrup which my husband and I find highly amusing. I'm sorry traditionally applesauce did not have corn syrup in it. It's sweet enough all on its own. Anyway my baby has yet to have sugar, he's 2 so that was pretty impressive accept for the trace amounts in bread which I'm not counting.
Anyway, tirade over I promise, you need to get a cup of applesauce this is just to make it sweeter I mean sweet potatoes already have pwotatoes sweet potatoes already have oops and a little bit extra, they already have a natural sweetness especially compared to a white or a russet potato or something. But since we're not doing any sugar if you don't want to do applesauce you could even throw in some dates and some extra water to compensate for that. Just don't give sugar to your baby he doesn't need it.
And I'm gonna put in teaspoon of cinnamon and that's really gonna make the flavor pop. My husband really loves this recipe and I generally send a jar with him too so it's not just for babies. Very important if you don't put the lid on your blender you'll have a big mess to clean up, ok. If you don't have a strong blender this is where you want to add in more of that liquid we saved the potato water. Turn this on here start blending and it should blend really easily because it's all soft but I'm cheating because I have a vitamix so everything seems easy. That is an appliance worth saving up for.
If you have an older child or a toddler you might be done at this point because you probably want it thicker. Let me do a little taste test here. So you would just put this in whatever container you want to if you were doing this for a toddler mmmm this is really good people.
But I, I'm giving this secret to my husband which is probably bad. I don't like to clean up mess, especially food baby mess during the day. It's my only 1 kid time of the day and I just try to keep it easy. So during the day I like to use my Ufill pouches. I love these things. The combination of vanilla, butter, cinnamon and eggs and milk make this casserole rich tasting and golden, then as if that wasn't enough, here comes the amazing crumble topping made with brown sugar, butter and flour with a beautiful design made out of pecan halves. This Sweet Potato Casserole can be enjoyed as a side dish or a dessert, either way is delicious and always a winner and made easy to be able to remove pecans if someone doesn't like them. INGREDIENTS----------------
4 medium/large sweet potatoes (peeled and cubed)
2 eggs
3/4 C. granulated sugar
1 & 1/2 tsp. vanilla extract
1/2 tsp. cinnamon
1 tsp salt (for boiling)
1/4 to 1/3 C. milk
1/2 C. butter (1 stick)
Butter to coat casserole dish
CRUMBLE TOPPING_______________
1/2 C. brown sugar
1/3 C. All purpose flour
3 Tbsp cold butter (small cubes)
Pecan halves to decorate (as needed)
BAKE 350°
40 minutes or till golden brown
