Cook the potatoes ahead of time to speed up the process ????
Oven temp -350f roast the potatoes for 1-2 hours
Then bake casserole for 25 minutes
Then another 5-8 minutes after adding the marshmallows
Ingredients:
3 lbs orange sweet potatoes
4-5 tbsp brown sugar
1/2 tsp salt
1 tsp ground cinnamon
1 tsp vanilla
1/4 cup heavy cream
1/4 cup melted unsalted butter
2 eggs
For the pecan streusel topping
1/4 cup brown sugar
1/4 cup APF
1/4 cup old fashioned oats
1/2 cup chopped pecans
1/2 tsp ground cinnamon
1/4 cup melted butter
Mini Marshmallows to top it off!!!!

• 3 to 4 pounds sweet potatoes peeled and cubed
• 1/2 cup salted butter
• 1/4 cup honey
• 1/2 teaspoon ground cinnamon
• 1/3 cup milk
• 1/4 teaspoon salt (optional)
✅Instructions

1️⃣ 00:00:35 - Place cubed sweet potatoes into a large pot. Fill with water to cover. Place on the stove and bring to a boil over high heat.
2️⃣ 00:00:49 - Once boiling, reduce heat to low and simmer sweet potatoes until tender (15-20 minutes). Drain well.
3️⃣ 00:01:04 - Transfer sweet potatoes to a large mixing bowl while still hot. Add in butter, honey, cinnamon, milk, and salt (optional). Mash using a potato masher, or use a hand mixer to blend until smooth and well combined.

Grilled Sweet Potato Salad with Applesauce Vinegarette
This salad is out of this world delicious! Served room temperature or cold, it is a change of pace from the traditional summer salads. Of course, all of my recipes are gluten free and dairy-free.
Please give it a try and if you don't have a grill, I will leave the oven method below in the description box. This recipe made enough for 4 servings for a nice picnic or Thanksgiving side dish If you need more, double everything except the dressing. #summersalad #thanksgivingsalad #scrumpcious
Ingredients:
5 slices of bacon cooked and crumbled. (I sprinkle a little chili pepper flakes on bacon while frying or baking optional)
2 pounds of sweet potatoes peeled (double for more people)
1/2 onion sliced
1 medium bell pepper
Cilantro or parsley
Dressing:
1/2 C. cinnamon applesauce (plain is fine but add 1/8 t. of cinnamon)
2 T. Apple cider vinegar
2 T. Red vinegar or vinegar of your choice
1 Tablespoon of dijon mustard or mustard of your choice
2-3 Tablespoons of honey or maple syrup to taste
1/2 teaspoon cumin
1/4 teaspoon coriander (optional)
1 T. smoked paprika or paprika of your choice
1 teaspoon dried dill
2-3 cloves of garlic
1/2 cup oil of your choice preferably light in color oil
1/2 teaspoon salt
1 teaspoon black pepper
Directions:
Cook your bacon the way you like (I bake mine)
Slice your peeled sweet potatoes into 1/4 inch slices for faster cooking put in a bowl with oil, salt, and pepper, and toss to coat.
Slice your onions coat both sides lightly with oil and salt and paper both sides
Slice your bell pepper toss with oil, salt, and pepper lightly
Put veggies on a low grill and watch them as they grill. The potatoes will take the longest
I turned the onions once to char them. Then I watched the bell pepper and took them off and put them in a ziplock bag so I could peel the skin off. After 10 minutes I pinched the peeling off to them.
The potatoes took longer than I thought because I sliced some of them 1/2 thick but as soon as a fork would go easily into the smaller pieces, I started pulling them off. See notes* for the oven method.
Put all the dressing ingredients except oil into a blender, food processor, or use stick blender, and then start adding the oil a little at a time until thick. Mix with bacon and cilantro (or parsley) and add dressing and fold into the salad ( I used half of the dressing for this salad)
*NOTES:
Oven method: Turn oven to 425° and put oiled salted and peppered slices of potatoes on a baking sheet sprayed with spray oil and bake for 20 minutes. Turn potatoes. Add onions and peppers to sheet cook about 20 more minutes checking every 10 for potato tenderness.
