How To make Sweet Potato Pie1
6 c Sweet potatoes
2 c Sugar
4 ts Cinnamon
1 t Salt
1 c Evaporated milk
8 oz Butter
2 Eggs, beaten
2 ts Vanilla
2 9-inch pie crusts
Boil sweet potatoes 30-40 minutes. Peel. Beat potatoes, butter and salt with mixer; add other ingredients, beating after each addition. Pour into crusts and bake at 350 degrees for 30 minutes or until firm. Serve with whipped cream or Cool-Whip.

This SWEET POTATO PIE stole my heart!! I was a big fan of Pumpkin Pie until I made this recipe. I must say I love the flavor that the Sweet Potato brings. I made this pie going off of my Love's preferences. This is his favorite dessert and he loves extra sweet anything. Hence the Maple Syrup I add to this recipe. LOL Try to scale out the sweet potatoes. Make sure you're only using 1 1/2 lbs . If you add more it may mess with the texture of the pie. I hope you enjoy this video and recipe. RECIPE: For 1-2 pies
3 medium to large sweet potato
1/2 cup evaporated milk
1/2 stick soften or melted butter( unsalted or salted)
2 eggs per pie
1/2 cup brown sugar( optional)
1 cup white granulated sugar then add more later if not sweet enough
1tsp vanilla extract add more later to taste (lemon extract is optional) your choice
1tsp cinnamon- add more later to taste
1tsp nutmeg- more later to taste
1/4tsp salt(not table salt) if you are using unsalted butter only
1tbsp flour( optional)

Easy NO BAKE (Aussie Style) Sweet Potato Pie
Serves: 6
Prep Time: 10 mins
Cook Time: 25 mins
Ingredients:
For the Pie Filling
1 large sweet potato, peeled and cubed
1/3 cup butter
½ cup sugar (or sweetener of choice)
1L Buttermilk
1 tsp vanilla extract/essence
1 tsp Ground Cinnamon
1 tsp Ground Nutmeg
1/2 cup Cornflour (mixed with some water to turn it into a slurry)
For the Pie Base
300g Plain sweet biscuits
150g butter, melted
Method
1) To make the pie crust, process biscuits in a food processor. Add butter and mix well. Press mixture into a 21cm springform cake tin and ensure the mixture comes up the sides. Place tin in refrigerator until required.
2) Add all the pie filling ingredients into a medium sized saucepan and place over medium heat. Bring to a simmer and cook until potatoes are tender (approximately 15-20 mins).
3) Once potatoes have been softened, puree using a stick blender until smooth. Keep on medium heat and add cornflour slurry while whisking constantly. Bring back to simmer over medium heat for approximately 5 mins. Remove from heat.
4) Take pie crust out of refrigerator and pour in the pie filling, just enough to sit flush with the crust edge. Refrigerate for approximately 4 hours or overnight to set.
5) Slice the pie and serve with a dollop of cream.

Sweet Potato Recipe
- 3 Large Sweet potatoes (One for each pie)
- 1 &1/2 Stick of Butter (Melted)
- 1 Cup Sugar (Add another cup, if batter is not sweet enough for you)
- 1 &1/2 Tbs Lemon Extract
- 1 &1/2 Tbs Vanilla Extract
- 1 tsp Cinnamon
- 1 tsp Nutmeg
Bake for 10 mins @ 375. Then bake for 50 mins @ 350 degrees

Today we make one of my favourite fall treats.... with a twist. Pumpkin pie is awesome, but we wanted to use an ingredient we all know and love... SWEET POTATOES!

Recipe:
Pie Filling
2 Cups of roasted Sweet Potato (peeled)
1/2 Coconut Sugar (or other dry sugar - use more for a sweeter pie)
1/2 Cup Full Fat canned Coconut Milk
2 Tbsp Ground Flax mixed with 5 Tbsp Water
2 Tsp Pumpkin Spice (add more if you want!)
Pie Crust
1.5 Cups of Oats
1/2 Cup Pecans
2.5 Tbsp Maple Syrup
1.5 Tbsp Coconut Milk (from the same can used for the pie filling)
1/4 Tsp Salt
Method
Combine all the pie filling ingredients into a blender or food processor until smooth.
Combine all the ingredients for the pie crust into a food processor and blend until uniform and it sticks together.
Press into a 9 pie dish.
Add pie filling.
Cover edges with foil to prevent burning.
Bake at 350f for 45-50 minutes.
Allow to cool before serving.

Sweet Potato Pie
A southern favorite with low added sugar. Here is the recipe for a single 9 pie:
1/3 Cup Butter
1/2 Cup Sugar
2 Eggs
3/4 Cup Evaporated Milk
2 Cups cooked, mashed Sweet Potato
1 teaspoon Vanilla
1/2 teaspoon Cinnamon
1/2 teaspoon Nutmeg
1/4 teaspoon salt
Mix butter and sugar, then add eggs and beat well. Add evaporated milk and sweet potato pulp, then add spices and salt. Mix very well and pour into an unbaked 9 pie shell.
Bake for the first 15 minutes at 425 degrees F, then lower heat to 350 and bake for another 35 to 40 minutes. Test with a toothpick for doneness, if the toothpick comes out of the center clean, it is done. Remove from oven and cool. Serve at room temp with whipped cream and refrigerate any leftovers.
