Ingredients:
Shallots-650 Grams
Green Chili-100 Grams
Green Papaya-30 Grams
Green Beans-30 Grams
Carrots-50 Grams
Mustard Seeds-15 Grams
Salt toy our taste
Vegetable Vinegar-2 Cups Or 500 ML

Ingredients:
Pani (Water) 2 cups
Sirka (Vinegar) 2 cups
Cheeni (Sugar) 1 cup
Raidana (Mustard seeds) 1 tbs
Namak (Salt) 1 tbs or to taste
Mix herbs ¼ tsp (Optional) for rich flavor
Gajar (Carrots) 200 g (washed, peeled & cut into thick julienne or in desired size & length)
kheera (Cucumber) 200 g (washed, peeled & cut into thick julienne or in desired size & length)
Gobi (Cauliflower) 200 g (washed & cut)
Hara pyaz (Green onion) 100 g (take white part)
Adrak (Ginger) 2 inch piece (washed, peeled & cut into thick julienne or in desired size & length)
Lehsan (Garlic) 10-12 cloves
Hari mirch (Green chilies) 6-7 (washed & slit)
Sabut lal mirch (Whole Red chilies) 4-5
Directions:
In a sauce pan add water, Vinegar, sugar, salt, Mustard seeds, mix well until sugar dissolve.
Add mix herbs and bring it a boil. Switch off the flame.
In a dry & clean glass jar add all desired vegetables, and prepared solution and mix well.
Cover tightly and keep in normal temperature for 3-4 days (shake occasionally).
