Today I will show you how to make Pickled Red Onions with habanero, Cebolla Encurtida Roja. It is super simple to make. I always try to have Pickled Onions in my fridge, they go with any Mexican dish perfectly ????. These are good in the fridge for up to 4 weeks.
PICKELED RED ONIONS WITH HABANERO INGREDIENTS:
► 1 red onion
► 3 habanero peppers
► 1 tsp of sugar
► 1 tsp of oregano
► Some white pepper
► 1/4 cup of white wine vinegar
► The juice of 2 Limes
► Some salt to taste

I freaking love Pink Pickled Onions. Or are they really Red Pickled Onions?
Loads of my favourite restaurants use them. They are a great way to zhuzh up any meal with a bit of colour and a bright note of acid. Plus they are really easy to make. I'm going to show you how to make Pink Pickled Onions
For the Pink Pickled Onion Recipe:
You need red onions, vinegar, salt, sugar and some aromatics.
4 large Red onions peeled and sliced thinly
4 tbs Salt
4 tbs White sugar
1 tbs black peppercorns
400ml White vinegar
400ml freshly boiled water. ⠀

My two favorite methods for pink pickled onions, based on the experiments in this video:
FAST: Slice a red onion into thin wedges from tip to root. Dump them in boiling water for 10 seconds, drain the hot water, then cover them all the way up with room temperature vinegar plus a little lime juice (and maybe some water if you like them less tart), a pinch of salt, a handful of sugar, and maybe a few spices. Let cool and then keep in the fridge for a week or two. They're pickles as soon as they cool down.
SLOW: Slice a red onion into thin wedges from tip to root. Cover them about 2/3rds of the way up with room temperature vinegar plus a little lime juice (and maybe some water if you like them less tart), a pinch of salt, a handful of sugar, and maybe a few spices. Throw them in the fridge and stir once or twice over the next few hours. They'll be pickles in about a day. Keep in the fridge for a week or two.
Pickled Red Onions #shorts
Having had a lot of requests for this on my IG, it is finally up! My 'go to' for pickled red onions.
Ingredients:
⠀⠀⠀⠀
3 red onions
1/2 tbsp peppercorns
1 tbsp mustard seeds
2 tbsp coriadner seeds
5 cloves
3 cups / 235ml water
2 cups / 235ml apple cider vinegar
1.5 tsp salt
2 tsp sugar
⠀⠀⠀⠀
31 oz. / 916ml sterilised container
⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀
Method:
⠀⠀⠀⠀
1. Finely slice the red onions
2. Toast the spices in a pan for 5 minutes, until fragrant.
3. In a new pan, add vinegar, water salt and sugar. Let it dissolve. Add the spices and boil for 5 minutes.
4. Place onions into container and pour over pickling liquid. Seal and refrigerate for 24 hrs before using.

Go perfectly in sandwiches, salads and as garnishes. They add a lovely ‘tang’ to the dish. Can be kept for up to a month in the fridge.
