Velouté Sauce is basically reduced white stock that is then thickened with white Roux - a 1:1 mixture of butter and flour. The amount of Roux you need is 10% of the overall liquid weight, e.g. 50g are needed to thicken a pint of stock. This sauce is one of the five mother Sauces Series of french cuisine, along with sauce espagnole and sauce tomate and sauce hollandaise and sauce béchamel.

Xanthan Gum is a very powerful thickener and should be used in extremely low proportions (starting at 0.05% ! ). From what I have read so far, the best way to use it would be to combine it first with carrageenan seaweed which unfortunately I did not have access to.
A quick note, instead of diluting Xanthan gum in oil, I did it in clarified butter which added a little richness and a bit more french vibes to my velouté sauce.

Tomato Dressing
Servings: 1 cup
Preparation time : 5 min
Chilling time: 1 -2 hrs
From the book The McDougall Program for Maximum Weight Loss by John and Mary McDougall.

Ingredients
3/4 cup tomato juice (V8 or spicy tomato juice)
¼ cup red wine vinegar or balsamic vinegar
1 tablespoon chopped fresh parsley
1 tablespoon chopped chives or scallion
One clove garlic, pressed (discard outer shell)
1/2 teaspoon salt (optional)
Pinch dried oregano
Pinch sugar
Pinch of ground Cayenne
Freshly ground pepper
¼ teaspoon guar gum
Combine all the ingredients in a jar and shake well to mix. Let’s stand for 1 to 2 hours before serving to allow time for the guar gum to thicken the dressing.

Everything You Need To Know About Buying Salad Dressing At The Grocery Store
We're back at the grocery store checking out all of the options for salad dressing. I am sorry to say, that most of the salad dressings at the store are full of garbage and stuff you want to stay away from, it's really sad. Why they feel the need to use heavily processed canola oil and soybean oils, tons of sugar and salt, and preservatives amazes me. Just use good quality ingredients and charge a little extra, come on! I really like primal kitchen and chosen foods, the ingredients are clean, the flavor is great, and they have many varieties. Unfortunately it a bit expensive. Let us know what aisle to review next! My fav salad dressing brands...if you're not going to make your own:
Primal kitchen: High quality avocado oil, no sugar, keto, paleo, & whole30 approved
Chosen foods: Avocado oil, clean ingredients, same as primal
Bragg vinaigrette: Only brand using extra virgin olive oil, barely any salt, amazing ingredients
I like these brands, but they could do a bit better:
Organic girl: Wish they used the same oils as above and not so keen on agave nectar bc it's high in fructose
Tessemae’s: Great ingredients, but why can't you use avo oil or EVOO!?
Annie's organic: Could use better oil and wish they did not use cane sugar
Bolthouse organic: How this one is so much better than the standard one is wrong..so so wrong.
Daiya: Don't love it, but it passes my test
O'dang hummus dressing: wish it had organic chickpeas, they do use EVOO, but one flavor had carrageenan
Avoid fat free dressings like Walden farms, they are loaded with emulsifiers, preservatives, and splenda sugar...Barf!
Stay away from these brands and any that use canola or soybean oil, unless they are expeller pressed and non-gmo.(but you can still do much better)
