How to Make Italian Pasta Salad - Recipe in description
Get your taste buds excited with the tantalising blend of flavours present in this Pasta Salad, perfect for any occasion or time of year.
Preparation time: 30 minutes.
Rest time: 3 hours.
Difficulty: Normal
Calories per serving: Unspecified
Ingredients for 4 people:
500 grams of pasta
200 g of cherry tomatoes
1 bunch of rocket (arugula)
1 jar of sun dried tomatoes in oil
1 can of small olives
1 bag of pine nuts
50 g of parmesan cheese
For the sauce:
1 part olive oil
2 parts oil from the jar of tomatoes
1 part balsamic vinegar
A little mustard or ketchup
1 onion, finely chopped
1 garlic clove, finely chopped
Salt and pepper
Cook the pasta al dente and let it cool down. Grind the cherry tomatoes, dried tomatoes and olives and mix everything with the cooked and cold pasta.
Make a vinaigrette with the sauce ingredients, season to taste and toss into the salad. During the process, check the acidity of oil from the jar of dried tomatoes. Mix the parmesan cheese (preferably shredded) with the salad. Ideally it should be left to stand in the refrigerator for 2-3 hours. After, season if necessary and fine tune the ratio between oil and balsamic vinegar.
Wash the rocket, cut into pieces and mix with the salad just before serving. Finally, briefly toast the pine nuts in a pan and add to the salad arranged on plates. To be served with fresh ciabatta bread and a delicious red wine.
