How To make Parmesan Sweet Potatoes& Pasta
1 large sweet potato
2 tablespoons light brown sugar
2 teaspoons olive oil
2 teaspoons margarine
1 tablespoon water
1 tablespoon grated parmesan cheese
6 ounces spinach pasta, fresh
1. Prick the sweet potato in several places, place on a paper towl, and microwave until tender, 8 to 9 minutes, turning half-way through cooking time. Let stand until cool enough to handle, then slip off skin.
2. Put a large pot of water on to boil. Pre-heat broiler and spary, or lightly oil, a baking sheet. Cut potato crosswise into 1/2 inchslices andplace on prepared sheet.
3. In a small saucepan, combine sugar, oil, butter and water. Cook over medium heat, stirring constantly, until sauce is smooth and bubbly, about 2 minutes. Reserve about 2 tablespoons of sauce. Brush remaining sauce over potato slices, sprinkle with Parmesan cheese, and broil until slightly browned, 1 to 2 minutes.
4. Cook fettucine according to package directions, drain well, and toss with reserved sauce. Mound pasta on serving plates and top with potato slices.

Ingredients

2 medium-large sweet potatoes
3 eggs (2 yolks and 1 whole egg)
200 g grated pecorino cheese
5 g pepper
1 tablespoon of olive oil
250 g smoked pancetta
A handful of baby leaf spinach
Steps
1. Peel sweet potatoes and cut off the ends.
2. Attach spiralizer onto your KitchenAid Mini and spiralize the potatoes.
3. Tip pecorino cheese, eggs (2 yolks and 1 whole egg) and pepper into the KitchenAid Mini bowl.
4. Attach wire whisk and mix at speed 4 for 2 minutes.
5. Cut the pancetta into strips and fry them in a pan for 5 minutes.
6. Remove the pancetta from the pan. Pour a tablespoon of olive oil in the same pan and add the sweet potato noodles. Cook for 15 minutes on a gentle heat until the noodles are soft.
7. Add the pancetta.
8. Turn off the heat and add the egg and pecorino mix. Garnish with baby leaf spinach.

Ingredients:
1 bunch of kale
1 large sweet potato
1 cup of canned chickpeas
1 tbs of grated Parmesan
For dressing:
2 tbs tahini
1/2 lemon juiced
1 tsp honey
2 garlic cloves
1 tsp Worcestershire sauce

Roasting spice mix:
1 /2 tsp smoked paprika
1/2 tsp cumin
1/2 tsp garlic powder
1/4 chili powder

Preparations:
Preheat the oven to 400F
Peel and slice the sweet potato into 1/4in rounds.
Drain the chickpeas and Pat dry with a paper towel.
In a large bowl combine the sweet potato, chickpeas all of the spices, salt and pepper to taste. Drizzle with some olive oil and mix well so the sweet potato coated in spices al around.
On a large sheet pan, lay out the sweet potato and chickpeas in single layer. Roast for 20-25 min, until the potatoes are golden and Chickpeas get crispy.
In a small bowl or a jar, combine tahini, lemon juice, honey, Worcestershire sauce and minced garlic. Mix well. Add some ice cold water to thin the sauce if needed.
Chop up the kale, add a splash of olive oil and massage for about 1-2 min.
Assemble the salad, sprinkle with greater Parmesan and enjoy!
