How To make Mushroom & Barley Miso Soup
3 tb Vegetable oil
1 lg Onion, chopped
1 ts Thyme
12 oz Mushrooms, chopped
1 tb Pot barley, washed
1 1/2 pt Water
1 ts Miso
1 sm Garlic clove, crushed
1 ts Salt
Soy sauce to taste Parsley, chopped Heat oil in a large pot & saute the onions & thyme. After 5 minutes, add the mushrooms & cook for another 2 minutes. Add the barley & water & bring to a boil. Reduce heat, cover & simmer for 1 to 1 1/2 hours. Blend 1/4 pint of the soup in a blender with the miso, garlic, salt & soy sauce. Pour the blended soup back into the soup pot, mix well, reheat & serve garnished with lots of chopped parsley.

75 grams kabocha pumpkin (sliced)
50 grams onion (sliced)
2 tablespoons white miso (add more to taste)
mitsuba (chopped, for garnish)

1 1/2 cups dashi
30 grams carrots (thinly sliced)
1 tablespoon miso (add more to taste)
90 grams soft tofu (cubed)
40 grams spinach (chopped)
INGREDIENTS (Red Miso Soup)
1 1/2 cups dashi
75 grams eggplant
30 grams aburaage (thin fried tofu)
1 tablespoon miso (add more to taste)
scallions (chopped, for garnish)

This recipe for a mushroom barley soup is creamy and savory, and there are so many flavors going on that people who are opposed to mushrooms might not mind. Additionally, it is extremely healthy for you, as it’s packed with fresh vegetables and not much else. You’ll want to let it cook for a while, so all the flavors can blend together, but it’s quite easy. Take a look at this recipe for a creamy mushroom barley soup.

How to make your delicious Miso soup
Miso Soup-serves 4
For the Dashi (stock)
1ltr water
5cm strip Kombu
1 Dried shiitake Mushroom
Ingredients for the soup
1 tbsp. Wakame
1 pack Sliken Tofu
1 finely chopped Spring onion
For the Miso
2-3 tbsp. Brown rice, Barley or Hatcho Miso to taste
Method:
Soak Dashi for 30min, bring to boil, remove kombu and add ingredients for soup, when cooked take off the heat and add Miso.
*Tip do not boil after Miso is added as it kills the good bacteria.

16 ounces Portobello Mushrooms
1 can of Diced Tomatoes
2 cups dry Barley
1 Tablespoon chopped Garlic
3 teaspoons Better Than Boullion or Miso Paste
6 cups Water
1 Tablespoon dried Thyme
Pepper to Taste
Optional add in - 2 Tofurkey Sausage
