How To make Layered Vegetable Terrine
TERRINE:
2 c Shelled peas
2 c Chopped carrots
4 c Cauliflower florets
3 Eggs; separated
6 tb Low-fat cream cheese
3 ts Lemon juice
1 tb Chopped fresh chives
2 tb Freshly grated nutmeg
Salt Freshly ground white pepper SALAD:
3 lg Carrots; peeled
1 sm Handful of fresh chives
-- snipped 2 tb Hazelnut oil
1 ts Raspberry vinegar
Salt Freshly ground black pepper Preheat the oven to 375 F. Lightly oil and line the bottom of a 2-pound loaf pan with wax paper or parchment. Steam the peas, chopped carrots, and cauliflower separately for 10 to 15 minutes, or until each is cooked. Let cool. Puree the peas with 1 egg yolk, and 1 teaspoon lemon juice. Repeat with the carrots and then the cauliflower. Stir the chives into the pea puree, the almonds into the carrot puree, the nutmeg into the cauliflower puree. Whisk the egg whites until stiff, then carefully fold one-third into each puree until just combined. Season well and spoon the pea mousse into the prepared pan, carefully smoothing the surface. Top with the carrot mousse and then the cauliflower mousse, smoothing the surface of each. Cover with a piece of lightly oiled wax paper. Place the loaf pan in a roasting pan and pour in boiling water to come two thirds of the way up the sides of the pan. Transfer to the oven and bake for 40 minutes. Remove the wax paper and cook for 10 to 15 minutes more, until the top feels firm to the touch. Remove from the oven and let cool in the pan on a wire rack. Using a potato peeler, peel the whole carrots into thin strips and toss with the chives. Blend the oil, vinegar, and salt and pepper and mix with the carrot strips and chives. Jacques Pepin's Eggplant and Brie Terrine is a Slice of Heaven | KQED
In this episode of Today's Gourmet, Jacques Pepin prepares a menu derived from the South of France and it is especially easy on the eyes. He starts off with a terrine, a fantastic dish using layers of eggplant, red pepper, and brie molded into a loaf and cut into slices so you can view the gorgeous strata. Next he prepares a fresh and healthy wine-poached red snapper with leeks and cucumber garnish. He rounds out the meal with an elegant omelet soufflé dessert, similar to Baked Alaska. Beet Terrine Recipe
Here is a vegetarian recipe for valentines day made using beets and and a beautiful citrusy goats cheese. This beet terrine recipe takes a little while to make and assemble but if you follow the steps correctly it only takes a few ingredients and the results are really stunning. I started off by boiling some beets until tender, peeling them, slicing them using a mandolin though you could easily use a nice sharp knife. I then whipped some goats cheese with some lemon and orange zest, and juice and a little bit of thyme to spread between each layer of beets. I've given basic amounts but most of this should be done to taste.

To assemble just alternate a layer of beets then a layer of goats cheese making sure to start and finish with a layer of beets. I used a small offset spatula to spread the goat cheese but if you don't have one feel free to use a spoon. To get the layers nice and clear I then pressed the terrine for several hours (you can also leave it overnight) this will help give the beet terrine really nice and tight looking sections. It also make it easier to cut when it's cold and compact.
To slice the terrine, use a nice sharp knife, square off the edges and cut to your desired thickness. For plating, you can plate it however you want! For this video, I just placed a spoon of yogurt with a little bit of spicy micro green mix (radish, kholrabi etc) and sprinkled with some fleur de sel to finish.
If you or your loved ones are vegetarian or you are simply trying to eat something a little lighter on Valentine's day then this recipe is perfect for you.
Please note, if you are vegan, you can easily substitute the goats cheese for a vegan cheese alternative like nicely blitzed cashew cheese.
