Kiwi Vanilla Cupcakes with Kiwi Buttercream Frosting
Servings - 6 - 7
INGREDIENTS
(Cupcake)
Unsalted butter - 110 grams
Granulated sugar - 100 grams
Egg whites - 2
Egg - 1
All purpose flour - 250 grams
Salt - 1/4 teaspoon
Baking powder - 1 teaspoon
Vanilla extract - 1 teaspoon
Milk - 80 milliliters
Mashed kiwi - 80 milliliters
(Frosting)
Unsalted butter - 110 grams
Mashed kiwi - 60 milliliters
Vanilla extract - 1/2 teaspoon
Icing sugar - 100 grams
Salt - 1/8 teaspoon
PREPARATION
(Cupcake)
1. In a mixing bowl, add 110 grams unsalted butter, 100 grams granulated sugar and mix well. Add 2 egg whites, 1 egg and mix it again.
2. Add 250 grams all purpose flour, 1/4 teaspoon salt, 1 teaspoon baking powder, 1 teaspoon vanilla extract, 80 milliliters milk, 80 milliliters mashed kiwi and mix it again.
3. Divide the batter between muffin cups.
4. Preheat the oven to 350°F/180°C. Bake muffins 25 to 30 minutes or until tops are no longer wet.
(Frosting)
1. In a mixing bowl, add 100 grams unsalted butter, 60 milliliters mashed kiwi and mix well. Add 1/2 teaspoon vanilla extract, 100 grams icing sugar, 1/8 teaspoon salt and mix it again.
2. Begin to pipe the frosting onto a cupcake, starting with the outside edge and working your way into the center of the cupcake, progressively stacking the frosting as you go around in circles.
3. Garnish each cupcake with a kiwi slice.
4. Serve and enjoy!

To make Kiwi muffins:
• In a bowl, add
1-1/2 cup wheat flour,
1 tsp baking powder,
1/2 cup powdered brown sugar,
1/2 tsp cinnamon powder & sift well.
• In a different bowl, add
1 egg,
1 tsp vanilla extract,
60 ml olive oil & mix well.
• Add 1-1/2 cup warm milk & mix again.
• Mix the wet and dry ingredients together.
• Now, add 2 chopped kiwis & mix.
• Line a muffin tray & fill with the batter.
• In a pre-heated oven, bake the muffins at 190°C Cor 12-15 minutes.
• Once baked, let cool in the tray.
• Kiwi muffins are ready, serve & enjoy these healthy muffins.

Chelsea's Kitchen - Episode 009 - Coconut Kiwi Muffins
Hey,
Today's video was fun to make; a sleepy dog makes for an easier day in our house.
The recipe didn't call for kiwi, but since I had it, I decided to try it (I would probably use banana next time).
Coconut Muffin Recipe:
1/2 cup coconut oil
3/4 cup all purpose flour
1/2 cup buckwheat flour
1.5 teaspoons baking powder
1 cup Greek Yogurt
1/3 cup sugar
1 egg, room temperature
1 teaspoon vanilla
3/4 cup shredded coconut (I used unsweetened)
1cup mashed kiwi
Mix flour, buckwheat flour, and baking powder together in a bowl. In a separate bowl, mix the coconut oil, greek yogurt, sugar, egg, vanilla, and kiwi. Mix the dry ingredients to the wet ingredients, and stir in half the shredded coconut. Place mixture into your cupcake tray and sprinkle the rest of the shredded coconut on top of the pre-baked mixture. Bake at 375 for 20 minutes.
