How To make Grilled Game Hens
2 Cornish game hens, 1 1/2 pounds apiece
split
lengthwise 1/4 cup olive oil
1/3 cup white wine vinegar
4 cloves garlic :
minced
3 tablespoons cilantro or parsley -- chopped
3 tablespoons honey
3 tablespoons soy sauce
1 tablespoon ground ginger
1/4 teaspoon crushed red pepper flakes
dash pepper
Place hens in a large resealable plastic bag or shallow glass container. Add remaining ingredients (up to 2 tablespoons ground ginger); seal or cover and refrigerate for at least 1 hour. Remove hens, reserving marinade. Place hens in a 13-in. x 9-in. x 2-in. disposable aluminum pan. Pour marinade over hens; cover pan. Grill, covered, over medium-hot coals, basting frequently, for 35-40 minutes or until juices run clear and a meat thermometer reads 170 degrees. Place hens directly over coals for the last 3-4 minutes of cooking

Smoke at 225 for 2 hrs then increase heat to 350 then cook until 165-170 internal temp

Cornish Hens Recipe | Grilled Cornish Hens
We did a complete 180 in this video and used the gas grill, has the gasser! We wanted to illustrate that you don’t need a smoker for all of our recipes, in fact most you can use any smoker or grill. This was a rather simple yet delicious recipe. Cornish Hens are under-utilized in my opinion. This turned out great, I hope you give them a try!
• 2 Cornish Hens
• 1/2 TSP Salt
• 1/2 TSP Black Pepper
• 1 TBSP of Jerk Seasoning
• 2 TBSP of Worcestershire Sauce
• 2 TBSP of Olive Oil
• 1/2 Stick of Butter
• 1 Package of Fresh Poultry Herbs
• 4 Cloves of Fresh Garlic
• Two spring Onions Chopped
We set up our gas grill running two zones. On the hot side we ran at 400 degrees.
While preheating your grill, wrap two bricks with foil.
Remove the backbone from each hen then score the breastbone with a sharp knife, flip hen over skin side up and press down flattening the bird completely.
Apply the Worcestershire sauce as a binder. Season with Salt, Pepper and jerk seasoning.
Place hens skin side down on the hot side of the grill. Place bricks on top.
After 6-8 minutes, remove brick, flip chicken and place brick back on top for 6-8 more minutes.
In a skillet add the olive oil, butter, fresh herbs, garlic and onions. Let simmer for 10 minutes.
Remove the bricks from the hens.
Place the hens on the cooler zone of the grill and baste with herb sauce.
Remove when you reach an internal temp of 165 in the breast and 190 in the thighs.
