How To make Grilled Eggplant Salad with Onion and Cucumber
2 Small eggplants*
2 tb Salad oil (approx)
1 Medium European cucumber**
1 Sm red onion,thinly sliced
1/2 c Cider vinegar
2 tb Firmly packed brown sugar
1/2 ts Salt
* - end trimmed, cut into 3/4" thick slices ** - thinly sliced ====================================================================== === 1. Lightly brush eggplant slices with oil and put them on a tray.
2. On a barbecue with lid, place grill 5-6" over a solid bed of hot
coals (you can hold your hand at grill level only 2-3 seconds). When grill is hot, rub it lightly with a paper towel dipped in salad oil. 3. Lay eggplant slices close together on grill. Cover barbecue, open
drafts, and cook until slices are well browned and soft when pressed, 15-20 minutes; turn, as needed, with a wide spatula. Return slices to
the tray. If slices are cooked ahead, cover and chill up to a day. 4. In a bowl, cover cucumber and onion slices with ice water. Quickly
squeeze slices to briuse lightly, then cover and chill 30 minutes to 1 hour; drain. In bowl, mix cucumber, onion, vinegar, sugar, and 1/2 teaspoon salt. If made ahead, cover and chill up to 4 hours. Coarsely chop eggplant and spoon onto a rimmed platter; top with cucumber and onion mixture. Add salt to taste.

Eggplant and soy sauce side dish (가지나물)
Gaji-namul is a simple, delicious, everyday Korean side dish, meant to be eaten with other side dishes and rice.
It’s one of my favorites. I love the fresh taste, soft texture, and the beautiful vibrant purple color of the dish on the table. It's refreshing and goes well with oilier items to offset their texture and taste. I never get tired of it!
If you are a vegetarian, replace the fish sauce with soy sauce.

We are siblings who want to do versions of the foods we crave. We are not professional cooks but we love food. We check out food choices, cook, and give in to cravings. :) As they say, food is life. :)
INGREDIENTS:
4 pcs Talong
2 medium size Tomato
1 medium size Onion
1 medium size Red Bell Pepper
2 thumb size Ginger
5 tbsp White Vinegar
2 tbsp Water
1/2 tbsp White Sugar
Salt and Pepper to taste
PROCEDURES:
1. Dice the Onion, Red Bell Pepper, Ginger, and Tomatoes, then set aside
2. Poke each eggplant all over its body
3. Then grill for about 5 minutes or until eggplant skin is burnt. Please see video. Best grilled using charcoal. Some people would boil the eggplant but we prefer grilling them since it gives you that smokey flavor
4. While the grilled eggplants are still warm, peel off the burnt skin. It is best to remove the skin while still hot because it peels off easily.
5. Stir until sugar and salt dissolves
6. Once peeled, flatten and widen the eggplant on a flat surface using a fork.
7. Soak the flattened eggplant on the vinegar mixture and place on your serving plate
8. Then top them with the diced tomato, ginger, onion, and red bell pepper
9. Lastly drizzle with the vinegar mixture

Ensaladang Talong Recipe | Filipino Grilled Eggplant Salad Recipe
Hi Foodies! Ensaladang Talong or Grilled Eggplant Salad is a Filipino vegetable dish made with exactly three ingredients: Eggplant, onion and tomatoes. Filipinos usually tossed these ingredients in alamang (shrimp paste) or bagoong (anchovy sauce) and usually topped with salted duck egg. Though it is usually considered as a side dish to anything fried such as pork chops or fried fish, there is no harm in serving it as a standalone viand with warm rice.

Ingredients:
Eggplant
Ginger
Onion
Tomato
Cucumber
Chili
Salt
Sugar
Vinegar
Procedure:
1. Grilled eggplant, let it cool and peel the skin.
2. Combine eggplant, ginger, onion, tomato,
cucumber, chili, salt, sugar and vinegar.
3. Mix well and serve. Enjoy!
