Making: Green tomato mincemeat (And breakfast bar)

GREEN TOMATO MINCEMEAT:
3 cups chopped apples, peeled and cored
2 cups chopped green tomatoes
2 cups raisins
2 cups brown sugar
1 cube butter
1/4 cup white vinegar
1 orange {grated rind {chopped segments
2 teaspoon cinnamon
1 teaspoon allspice
1 teaspoon cloves
1 teaspoon salt
mix all ingredients together in pot bring to boil at medium high, then simmer on low till thick; about 2-3 hours
Optional: if processing hot water bath for 25 minutes
FRUIT BREAKFAST BAR:
-CRUST:
1 1/2 cup whole wheat flour
1 1/2 cup rolled oats
1 cup brown sugar
1 1/2 cubes melted butter
1/2 teaspoon cinnamon
1/4 teaspoon baking soda
Mix dry ingredients, add melted butter and mix, keep separate 1 1/2 cups of crumb topping, press remaining into oiled/greased/sprayed 13X9 pan, spread 2 cups cooked fruit, and top with reserved crumbs. Bake @350 for 25 minutes

Recipe for Mincemeat
It’s fun to make Mincemeat because you add a wide assortment of things that don't normally go together.. It looks strange at first, but it all comes together in the end, and always gets rave reviews from taste testers!
Ingredients:
8-10 green tomatoes or tomatillos, rinsed and quartered
6-8 apples, (4-6 made into applesauce; and 2-3 peeled and chopped)
*Other coarsely chopped fruit: peaches, pears, plums, kiwi.
*Dried fruit, about 2 cups: raisins, currants, figs (chopped)
*Cranberries, whole
Jam
Honey or sugar, sweeten to taste, start with 1 cup
Salt, to taste, start with ½ tsp
Cinnamon, start with 2 Tbsp
Cloves, start with 2 Tbsp

*These three items together should make up about 1/3 of the total ingredients - the green tomatoes make up another 1/3 and the apples and applesauce make up the last 1/3.
Directions:
Place green tomatoes in a large pot, cover half way with water and ring to a boil. Once they are soft, mash them with a potato masher. They should be the consistency of runny applesauce, add more water if necessary.
Add applesauce (you can make your own or use ready made) and your other chopped and dried fruits. If you have any extra jam or preserves you want to add, now is when you want to toss those in.
Simmer slowly and stir often, every 10-20 minutes so it doesn’t scorch. This is VERY important...DON'T LET IT SCORCH! That's the only thing that doesn't work in this mincemeat, trust me...I know :(
After a couple hours, the fruit should be mostly broken down, and the consistency should be similar to thick applesauce.
Add honey or sugar, to taste, along with the cinnamon and cloves. Once you’re pleased with the flavor, simmer for another hour to allow flavors to blend together. Cool.
Enjoy! and remember...the more crazy your ingredients are, the more fun it is!
To make your Mincemeat pie, add 4 cups of mincemeat to pie shell. Add top crust and bake.

Since I'm not American I didn't make the connection to Uncle Sam...
Ingredients:
6 medium sized green tomatoes
2 tablespoons water
½ lemon sliced
2 tablespoons cornstarch
1 cup sugar
1/8 teaspoon salt
¼ teaspoon cinnamon
2 tablespoons butter
Pastry ( )
Method:
Wash the tomatoes, remove the stem and blossom end, and cut into thin slices.
Cook the tomato, water, and lemon until the tomatoes are almost tender and drain.
When the tomato liquid has cooled add the cornstarch, which has been mixed with the sugar and salt, and cook until thickened.
Add the tomatoes, cinnamon, and butter, and mix thoroughly.
Pour the hot mixture into a baked pastry shell, add the top sheet of dough and bake in a moderately hot oven (375º to 400ºF.) for about 30 minutes, or until golden brown.

Turning Green Tomatoes into Mincemeat | Canning Green Tomato Mincemeat
INGREDIENTS:
12 cups chopped green tomatoes
6 cups chopped tart tomatoes - I used Granny Smith apples
1 lb. dark or golden raisins
1 cup dried currants or cherries
1 1/2 cups brown sugar
1 cup granulated sugar
Finely minced zest 1 lemon
2 Tbsp. minced candied ginger
1 1/2 tsp. salt
3 tsp. cinnamon
1 tsp. allspice
1/2 tsp. ground cloves
1/2 tsp. black pepper
1 1/2 cups brown sugar
1 cup granulated sugar
3/4 cup lemon juice
1/3 cup apple cider vinegar
2 cups water
Place all ingredients in pot. Bring to simmer.
Cook and occasionally stir for 1 1/2 to 2 hours or until liquid is reduced and
mincemeat has thickened.
