How To make Fruit Salad with Jalapeno Citrus Dressing
1/2 sm Honeydew melon
1 Ripe large papaya, peeled
Seeded cubed 1 pt Strawberries stemmed and
Hulled 1 cn Pineapple chunks drained
Jalapeno Citrus Dressing 1/3 c Orange juice
3 T Lime juice
3 T Minced fresh mint, basil
Or cilantro 2 Jalapeno peppers seeded,
Minced 1 T Honey
Scoop seeds from melon. Remove fruit from rind with melon baller or cut into wedges. Remove rind and cut into cubes. Place in large bowl. Add fruits and dressing. Gently toss to combine. Serve immediately or cover and refrigerate up to 3 hours. Garnish with mint. Super Easy Delicious Citrus Vinaigrette salad dressing.
Make a really delicious and quick salad dressing at home that is better than anything you can buy at a store.
Ingredients:
2 Tablespoons Olive Oil
1Tablespoon Honey
1/4 Teaspoon Salt
Half a fresh squeezed lemon
Dash of lime juice
Pepper to taste

Sweet fruit with savory vinaigrette
Ingredients:
2 tablespoons freshly squeezed lime juice
1 tablespoon canola oil
1 tablespoon minced shallot
2 teaspoons natural rice vinegar
1 teaspoon honey
1/4 teaspoon salt
Pinch of cayenne pepper
4 kiwis, peeled and chunked
2 firm ripe bananas, cut diagonally into 1/2-inch thick slices
1/2 cup diced sweet red pepper
2 tablespoons chopped nuts
Sparkling water to splash over salad
Directions:
Whisk lime juice, oil, shallot, vinegar, honey, salt and cayenne in a small bowl.
Place kiwis, bananas and red pepper into medium bowl. Pour some of the vinaigrette over the salad ingredients in bowl. Toss to coat. Just before serving, splash with sparkling water and sprinkle chopped nuts over salad.
Makes 4 servings.
Sue's Tips:
A thin-skin peeler has serrated blades and works well for peeling the fuzzy brown skin from kiwis.
Room temperature citrus fruits will yield the most juice when squeezed. Roll the lime on the counter, using light pressure, before juicing.

Easy Fresh Fruit Vinaigrette Recipe
Ingredients:
1 small banana, thinly sliced
1/2 cup orange juice
1 tablespoon lime juice
1/2 jalapeno pepper, seeded and minced
1/4 teaspoon sesame oil
1 teaspoon rice wine vinegar
1 teaspoon minced fresh ginger root
1 pinch salt and pepper
Directions:
Combine banana, orange juice, lime juice, jalapeno, oil, vinegar, ginger and salt and pepper in a blender or food processor and puree until smooth. Transfer to a container with a tight lid, cover, and refrigerate until ready to serve. Shake before serving.
