How To make English Muffins (Lerner)
1 c Warm water
1 tb Dry yeast
2 tb Vegetable oil
1 ts Salt
2 c Unbleached white flour
1 c Whole wheat flour
In a bowl, mix water, yeast, oil & salt. Beat in the white flour, followed by the whole wheat flour. Mix well. Oil the dough's surface & allow to proof till light, about 25 minutes. Knead dough slightly, till soft. Cut into 6 poeces & roll each piece in cornmeal. Form each ball into muffins, 3 3?4 inches in diameter. Place on a cookie sheet. 3 cups of water ( 3 ኩባያ ውሃ)
2 cups of flour (2 ኩባያ ዱቄት)
1 teaspoon salt (1 ሻይ ማንኪያ ጨው)
2 TBS clarified butter (2 የሾርባ ማንኪያ ቅቤ)
For topping:
Cooked collard greens
Plain Yogurt
green pepper paste

Dr Walsh is passionate about living a whole food plant based life and exposing inaccuracies that lead to poor health outcomes. He partnered with Dr Columbus Batiste and they have a program called “Slave Food, a platform for disseminating truth about the impacts of injustice and poor diets on all Americans but especially for African Americans.
Dr Walsh began his plant based journey in full after reading the China Study. He is now an advocate of a completely whole food/plant based lifestyle. Dr. Walsh has seen the benefits of this decision in weight loss and cherishes the information he was not given in med school. He is a graduate of the University of Miami Miller school of Medicine, Loma Linda University School of Public Health where he received his masters and doctorate in public health. His most important educational experience was his time at Oakwood University. He has served 2 US presidents (George W Bush and Barak Obama) as an advisor on HIV/AIDS. Dr Walsh has served at several churches as a Pastor and ties in his spirituality to his plant based lifestyle. He is a practicing physician and health care administrator. Currently he is the medical director for 18 Urgent Cares in Connecticut. He travels the globe speaking on many subjects.
