How to Make a Cherry Tomato Omelette With Herbs

In this video, Mahalo expert Judith Jones demonstrates how to make a cherry tomato omelette with herbs.
What You'll Need
---------------------------------------------------------------------
* 3 medium eggs
* 2 tbsp cherry tomatoes, sliced
* 2 tbsp olive oil
* 1 1/2 tbsp chives
* 1 tbsp parsley
* Salt and pepper to taste
* Large bowl
* Spatula
* Whisk
Preparation
---------------------------------------------------------------------
1. Set burner to medium. Heat nonstick frying pan.
2. Add olive oil to frying pan. Spread it around so that it covers the entire surface of the pan.
3. Pour eggs into the large bowl and whisk. Add a pinch of salt and pepper to taste (optional). You can also add milk if you like, but Judith prefers the eggs by themselves.
Cooking Process
---------------------------------------------------------------------
1. Add cherry tomatoes to frying pan. Let cook for 1-2 minutes.
2. Add the parsley and chives and let them cook with the tomatoes for 1 minute, then add egg mix to the pan. Spread the eggs around so they cook evenly.
3. Let the eggs cook for 1-2 minutes. Work your way around the edges with the spatula to make sure the eggs don't stick to the pan.
4. Flip the omelette quickly so it doesn't tear.
5. Let the eggs cook to your liking, then slide the omelette on to a plate and serve.

Ingredients:
3 oz mixed mushrooms, thinly sliced
1 cup red bell pepper, chopped
½ cup cherry tomatoes, halved
½ cup onion, thinly sliced
1 cup eggs or egg whites beaten
1 tbsp cooking oil
1 tbsp unsalted butter
salt and pepper, to taste
¼ tsp dried thyme, crushed
To Serve:
Bacon, sausage, hash brown, and or baked beans

0:09 Heat oil in a pan.
0:14 Add mushrooms, onion, tomatoes, and pepper. Cook over medium-high heat for about 5 minutes, stirring occasionally, until soft and all liquid has evaporated.
0:40 Add thyme then season with salt and pepper.
0:55 Heat another skillet on medium-high heat, melt butter.
1:02 Pour the egg then lower heat to medium. Cook for about 10 seconds without stirring until the omelet starts to bubble around the edges.
1:12 Sprinkle the cooked veggies on the middle portion of the egg.
1:18 When the bottom is set but the top is slightly wet and creamy, flip one half over the other half to form a half-circle.
1:25 Carefully slide the omelet out of the pan onto a serving platter. Serve immediately!

-Kali mirch powder (Black pepper powder) ½ tsp
-Doodh (Milk) 3 tbs
-Swiss premium Original cheese cream cheese spread ½ Cup or Cheddar Cheese Cream Cheese spread ½ Cup
-Lehsan powder (Garlic powder) ½ tsp
-Hara dhania (Fresh coriander) chopped 2 tbs
-Doodh (Milk) 2 tbs
-Cooking oil 1-2 tbs
-Lehsan (Garlic) chopped ½ tbs
-Shimla mirch (Capsicum) chopped ½ Cup
-Tamatar (Tomato) deseeded & chopped 1 medium
-Hara pyaz (Green onion) chopped ½ Cup
-Hari mirch (Green chilli) chopped 1 tsp
-Cooking oil 1 tbs
-Hara dhania (Fresh coriander) chopped
Directions:
-In a bowl,add eggs,salt,black pepper powder,milk,whisk well & set aside.
-In another bowl,add original cheese,garlic powder,fresh coriander & milk,whisk well & set aside.
-In a frying pan,add cooking oil,garlic & mix well.
-Add capsicum,tomato,green onion,green chilli,mix well & cook for a minute & set aside.
-In frying pan,add cooking oil,egg mixture and cook on low flame for a minute until eggs starts to set.
-On one side of egg omelet,add & spread stir fried vegetable mixture then spread cheese mixture over it.
-Carefully flip omelet,cover & cook on low flame for 2-3 minutes.
