Citrus Avocado Shrimp Salad
Super low carb and keto friendly!
Ingredients
1c of fresh orange juice(about 2 and a half oranges)
1/2c of fresh lemon juice(about 3 and a half lemons)
2tbs of chopped red onions
2tbs of fresh parsley
1lb of shrimp peeled and deveined
2tbs of minced garlic
Pinch of red pepper flakes
Salt and pepper
1tbs of extra virgin olive oil
Any green salad mixture
Instructions
Mix together all of ingredients(expect shrimp) into a large mixing bowl. Combine all ingredients well!
On med heat cook sauce in pan. For 5 to 8 mins. Then add shrimp to sauce. Cook shrimp until pink. You can also add a couple slices of oranges and lemons if desired.
The sauce is the dressing for the salad!

RECIPE
Sriracha Cumin Marinade:
5 tbsp avocado/olive oil
1 tbsp sriracha
1 tbsp cumin
1/2 tbsp paprika
juice from 1/2 lemon
salt & pepper
Honey Cumin Salad Dressing:
1/4 cup avocado/olive oil
1 tbsp cumin
1 tbsp honey
2 tbsp apple cider vinegar
juice from 1/2 lemon
salt & pepper
Combine all your desired veggies. In this video Marc used:
romaine lettuce
red onion
cherry tomatoes
avocado
Make sure to chill your dressing if you prefer it that way. Marinade your shrimp before grilling. Remove the tail from your shrimp after cooking. Combine all ingredients and voila!
