An Italian family taught me this quick aperitif from puff pastry, that always saves me out!
Ingredients:
pastry dough - 400 g (14 oz)

salt - 5 g (0.18 oz)
parmesan - 100 g (3.5 oz)
sesame seeds

pressed cheese - 200 g (7 oz)
salami - 150 g (5.3 oz)
poppy seeds
eggs - 1 piece
Tray size 32 X 42 cm (12.60 x 16.54)
IN THE OVEN 180 °C (356 °F)/20 minutes
for the sauce:
butter - 30 g (1 oz)
flour - 25 g (0.9 oz)
beer - 200 ml (6.76 fl oz)
chili flakes - 5 g (0.18 oz)
salt - 3 g (0.11 oz)
pressed cheese - 100 g (3.5 oz)

Preparing the Wonton Basket from Sand in Your Shoes, The Daiquiri Dick's Kitchen Workbook

The recently released second edition of Sand In Your Shoes, The Daiquiri Dick's Kitchen Workbook features many long-time favorites served at the restaurant. The Crispy Wonton Baskets filled with Playera Salsa is one of them and their chefs have decided to share these recipes with you.
Playera (plah-yeh-rah) is derived from the word playa, which means beach in English. This could be a great beach treat or just a super snack, any place and at any time. It has kick and will keep you reaching for more.
Playera Salsa
This should be made first so the ingredients can meld.
4 garlic cloves, peeled and coarsely chopped
3 cilantro roots, well scrubbed (find these at Asian markets)
2 serrano chilies, chopped
1/2 Tbs sugar
1/4 tsp kosher or sea salt
3/4 cup rice wine vinegar
Place all ingredients in a blender and blend until smooth.
If you like it hot, add more Serrano!
Wonton Baskets
These are being paired with the Playera Salsa and shrimp, but you can fill the baskets with anything you like, including other salsas from Sand In Your Shoes.
1 package wonton wrappers
2 eggs beaten, with a bit of water
1 quart canola oil, for frying
The video on this page really illustrates how to make these.
Brush the corners with the egg wash and pinch together until they stick.
Fry in the oil at 325° until golden
Drain and cool on paper towels.
These baskets work with any filling as long as it is not too dry or too wet. Plus, they look great.
While the baskets are cooling, you can toss the salsa.
Salsa Toss
1 cup poached shrimp, chilled
1/2 cup thinly sliced green onion
1/2 cup thinly sliced Roma tomato
Mix these ingredients with the Playera Salsa.
Place this mixture into the wonton baskets and top with a sprig of cilantro.
