VIETNAMESE ICE COFFEE CUPCAKES
Makes 20
Cupcakes
2 tbsp instant coffee powder (decaf will work too)
429g all-purpose flour
265g caster (superfine) sugar
1/2 tsp salt
3 tsp baking powder
375ml of milk
125ml vegetable oil
2 tbsp sweetened condensed milk (optional)
125g unsalted butter, softened
2 tbsp Greek yogurt (can substitute with sour cream)
1 tsp vanilla extract
2 large eggs
250ml Sweetened condensed milk to fill cupcake centres.
Frosting
1 batch Swiss meringue buttercream frosting (recipe: thescranline.com)
4 tbsp instant coffee powder
5 tbsp water

Zutaten:
Für den Teig:
- 50g Zartbitterkuvertüre
- 150g Mehl
- 75g gemahlene Mandeln
- 1 1/2 TL Backpulver
- 1/2 TL Natron
- 1 Prise Salz
- 2 Eier
- 100g Zucker
- 150ml Milch
- 60ml Sonnenblumenöl
Für das Topping:
- 250g Schlagsahne
- 1 Pck. Sahnesteif
- 20g Cappuccinopulver
- 1 TL Vanillezucker
- 1 TL Kaffeelikör (optional)
- Schokomokkabohnen zum Verzieren

Coffee cupcakes recipe//How to make coffee cupcakes
This coffee cupcakes recipe is a must have! In this video I’m going to show you how to make coffee cupcakes. These are so delicious, fluffy and just amazing. It’s perfect if you love coffee and have a sweet tooth! I’m sure they won’t last more than a few days in your home.
Ingredients:
4 eggs(separated)
1 ½ cups sugar
1 cup warm water
4 Tbsp oil
2 Tsp vanilla
1 tbsp baking powder
2 cups flour
Pinch of salt
4-8 tsp instant coffee (depending on how strong you want it)
Ganache
100ml cream
100g chocolate
Heat both of these ingredients on a double boiler until it becomes a smooth, glossy ganache.
For the cupcakes-
Start by separating your eggs. Place the whites in one bowl and the yolks in another bowl. Beat the egg whites with a pinch of bicarb juts to stabilize them. Beat until stiff peaks. Then to your egg yolks you can add in the sugar and beat until light and creamy. This will take around 5 minutes. Then to your warm water add in your coffee and mix. Then add this coffee mixture, oil, and vanilla to your egg yolk mixture. Beat this till combined. Then add in your flour and pinch of salt and beat until it lightens in color. Then mix in your baking powder .Do not over mix this. Lastly, fold in your egg whites. Fill up your cupcake liners around ½ - ¾ ways full. Do not overfill these as they will rise. Bake at 180 degrees C for around 15 minutes. Keep an eye on them. Let them cool and then dip/pipe your ganache on top. Final step-make sure you don’t eat all as they are so delicious!;)
