Buffalo Chicken Wings (with Bleu Cheese Dip)
The secret to perfectly crispy wings is a double-dusting in gluten-free oat flour before frying. The addictively spicy sauce marries perfectly with the creamy, cooling dip.
INGREDIENTS
For the wings:
1 cup oat flour (250 ml)
1 tsp cayenne pepper (5 ml)
1 tsp paprika (5 ml)
1 tsp salt (5 ml)
Freshly ground black pepper
1 1/2 to 2 lbs chicken wings (wing and drumette) (750g – 1 kg)
oil for deep frying
For the sauce:
1/3 cup melted butter (75 ml)
1/3 cup hot sauce (75 ml)
1/4 tsp garlic powder (1 ml)
For the dip:
1 cup sour cream (250 ml)
1/4 cup mayonnaise (60 ml)
Juice of one lemon
1/2 cup crumbled bleu cheese (125 ml)
1/4 tsp salt (2.5 ml)
Freshly ground pepper, to taste

- 1kg of Chicken Wings
- Olive Oil
- Salt, Pepper & garlic powder all mixed in Chicken wings
Buffalo Sauce
- Franks hot Sauce whole bottle ( Or Any hot sauce)
- 50-75g of butter
- Paprika 1/2 teaspoon
- 1 teaspoon of Cayenne pepper
- 1 TBSP of White wine Vinegar
- 1TBSP of Worcestershire sauce
- 1TBSP of Honey
Blue Cheese Sauce
- 150ml Buttermilk
- 150ml Soured Cream
- 1 crushed garlic
- Fresh dill
- 100g Blue Stilton
- Salt & Pepper

Ingredients
· 20 chicken wings (ends cut)
· ½ tsp sweet paprika
· 1 tsp onion (freshly grated)
· 4-5 garlic cloves, minced
· ½ tsp smoked paprika
· ½ tsp cayenne pepper
· 1 tbsp Italian seasoning
· ½ tsp salt (to taste)
· 1 tsp olive oil
Wing Sauce
· ¼ cup butter, melted
· ¼ cup tabasco sauce
· 1 tsp smoked paprika
· 1 tsp brown sugar
Blue Cheese Dressing
· ½ cup sour cream
· ¼ cup mayonnaise
· 1 garlic clove, minced
· 1 tbsp milk
· Crumbled blue cheese (plus more for topping)
· 1 tbsp lemon juice
· Green onion
Method
Step 1: Preheat oven to 400°F.
Step 2: In a bowl, combine the chicken wings, sweet paprika, onion, garlic, smoked paprika, cayenne pepper, Italian seasoning, salt, and olive oil; marinate for at least 1 hour in the refrigerator.
Step 3: Transfer the marinated wings to a baking tray (lightly brushed with oil) and bake for 40-45 minutes or until golden.
Step 4: To make the wing sauce, heat a skillet on medium heat and combine the melted butter, brown sugar, smoked paprika and hot sauce. Continue to cook, stirring occasionally, until the sauce thickens slightly. Reserve some of the sauce for serving.
Step 5: To make the blue cheese dipping sauce, combine the sour cream, mayonnaise, garlic, milk, blue cheese, lemon juice and sliced green onion; cover and refrigerate until ready to serve.
Step 6: Toss the chicken wings in the wing sauce ensuring that all are coated evenly.
Serve with our reserved hot wing sauce and delicious blue cheese dip.
