How To make Buffalo Chicken Wings w/ Blue Cheese Dipping Sauce
6 tb Butter or margarine
1/4 c Hot pepper sauce
Vegetable oil for frying 18 Chicken wings, disjointed,
-tips discarded Dipping Sauce: 1/4 lb Blue cheese, Roquefort or
-Gorgonzola 1/2 c Mayonnaise
1/2 c Sour cream
1 tb Lemon juice
1 tb Wine vinegar
hot pepper sauce to taste Prep: 10 minutes Cook: 35 minutes Serves: 36 mini-drumsticks These spicy hot wings w/ cool, creamy dip are all the rage. Serve w/ plenty of ice-cold beer. 1. Melt butter in a small saucepan. Add hot sauce & remove from the heat.
2. In large frying pan or deep-fat fryer, heat 1" of oil to 375?. Fry wings
in batches w/o crowding until golden brown, 12 1/2 minutes. Drain on paper towels. 3. Brush wings w/ spicy butter & serve warm w/ Blue Cheese dipping sauce.
BLUE CHEESE DIPPING SAUCE In small bowl, mash the blue cheese, leaving some small lumps. Whisk in the mayonnaise until blended. Add the remaining ingredients & whisk to blend well. Cover & refrigerate until serving time.

Chicken is safe to eat at 74°C but it can still look a little pink around the bone at this temperature. To avoid pink meat, you can take the wings up to 81 – 90°C on your Thermapen and they will still be perfectly tender and fall off the bone.

I have been a fan of Blue Cheese Dressing my entire life so, believe me when I say this recipe is amazing. It just doesn't come this good in a bottle and many online recipes just can't be trusted. Some bloggers get you in the vicinity of a decent dressing but there always seems to be something missing. Am I right? Well, not here, no sir/mam. Baked Buffalo Chicken Wings w/ Blue Cheese Dipping Sauce
Whether its game day with your friends or just a casual get together on the weekend. Buffalo Chicken Wings are always a crowd pleaser. For a much healthier alternative to frying the wings, I prefer to bake my wings in the oven. And don't forget a dipping sauce! Here's a Blue Cheese Dipping Sauce that goes perfectly with the spicy buffalo wings.
Baked Chicken Wings:
2 pounds chicken wings, wing tips cut
2 tablespoons olive oil
Salt and black pepper
Directions:
Preheat the oven to 425 degrees. Line a half sheet pan with foil and place a half sheet pan grate on top. Place chicken wings into a large bowl. Add olive oil and coat chicken then sprinkle with salt and pepper. Bake for 50 minutes turning chicken once halfway through.
While chicken is baking make the Buffalo Sauce.

Buffalo Sauce:
⅓ cup of butter
1 garlic clove, minced
½ cup hot sauce
1 tablespoon white wine vinegar
1½ tablespoons honey
¼ teaspoon celery salt
¼ teaspoon cayenne pepper
Directions:
In a medium sauce pan, add butter and heat until melted. Add garlic and cook until soft, not browned. Add hot sauce and whisk together. Continue whisking and add vinegar, celery salt, honey and cayenne pepper. Once chicken wings are done baking combine chicken and sauce in large bowl. Coat well and transfer to a platter. Serve immediately.

Blue Cheese Dip:
½ cup sour cream
¼ cup mayonnaise
1 tablespoon fresh lemon juice
¼ cup parsley
1 cup blue cheese, crumbled
1 tablespoon milk
¼ teaspoon salt
⅛ teaspoon black pepper
Directions:
In a small bowl, combine sour cream, mayonnaise, lemon juice, parsley, blue cheese, milk, salt and pepper. Mix well and serve. Dip will keep for refrigerated for up to five days.
