How To make Bean& Bacon Soup
2 c Pinto beans (dried)
1 t Salt
1/2 ts Pepper
4 Bacon slices, cut in squares
4 Carrots, chopped
4 Celery stalks, chopped
1/2 ts Thyme (dried)
1 Garlic clove, minced
4 oz Can of tomato paste
2 tb Olive oil
1 Onion, chopped
1 tb Wine vinegar
The approximate cooking time is 3 hours. Cover the washed beans with 6-8 cups of water and bring to a boil. Reduce heat, cover and boil gently for 1 hour and then simmer while still covered. Stir about every 15 minutes for the ENTIRE time the beans are cooking. After the beans have been cooking for about 1 hour and 45 minutes chop the onion and celery and carrots.
Slice the four slices of bacon into 1" squares. Saute the onion, celery and bacon squares in the olive oil for about 10 minutes. Add to the beans along with the thyme, chopped carrots and tomato paste. Simmer uncovered for another hour until the beans are tender and slightly mash the beans. with Michigan Dried White Beans and go to the perfect comfort food in less than an hour using
the Instant Pot.
INGREDIENTS:
4 slices bacon, chopped
1 small yellow onion, chopped
2 large carrots, chopped
2 ribs celery, chopped
6 garlic cloves, chopped
8 cups water or vegetable broth
1/2 teaspoon red pepper flakes
1 pound Michigan Dried White Beans (Cannellini or Navy)
2 sprigs rosemary
2 cups chopped spinach
Salt and pepper
1/4 cup grated parmesan cheese
Apple cider vinegar, for serving
DIRECTIONS:
1. Press sauté button on Instant Pot and cook bacon until crisp. Remove and set aside.
2. Add olive oil, onion, carrot and celery to the pot and cook until soft, about 5 minutes. Add
in garlic and sauté for 2 more minutes.
3. Add in water or broth, dried beans and rosemary. Cook on high pressure for 35 minutes,
then let the pressure release naturally.
4. Remove rosemary sprigs and puree soup with an immersion blender to desired consistency.
Blend a few times for a thin soup and blend longer for a thicker soup.
5. Stir in the chopped spinach and season with salt and pepper to taste.
6. Serve topped with grated parmesan cheese, bacon and a drizzle of cider vinegar.

Welcome Friends! Welcome back to the kitchen; today we're going to make a soup recipe. A very simple soup that relies on very simple ingredients: Beans and Bacon.
Ingredients:
250g bacon, chopped
1 onion, diced
250 mL (1 cup) diced celery
250 mL (1 cup) diced carrot
2-3 cloves garlic, minced
5 mL (1 tsp) dried oregano
salt and pepper
10 mL (2 tsp) dried chipotle pepper
750 mL (3 cups) broth
375 mL (1 1/2 cups) stewed tomatoes
2 - 540 mL cans beans, drained and rinsed
Method:
In Dutch oven or soup pot, cook bacon over until fat is rendered and bacon is crisp.
Add onion, celery, carrot, and garlic; cook until onion is softened.
Add oregano, salt, black pepper and dried chipotle, stir in.
Stir in beans, tomatoes, and broth; reduce heat to a simmer, cover and cook for 30 - 60 minutes
