How To make Bacon and Bean Soup
3 sl Back bacon
3 Stalks celery, chopped
2 md Carrots, chopped
1 md Onion, chopped
1 c Chopped turnip
3 c Beef broth
1 Bay leaf
1/2 ts Thyme
1 cn (19oz) kidney OR pinto
-beans, drained and rinsed
Prep time: 25 minutes. When the vegetables are finely chopped it takes only a short simmering time to develop and blend the flavors of the bacon and assorted winter vegetables. The beans add character and a heartiness that is satisfying. And an added plus - the soup is better a day or two after it is made. Store it in a covered container in the refrigerator. Cut bacon into thin slivers. In a 12 cup saucepan, combine bacon,celery, carrots, onion, turnip, beef broth, bay leaf and thyme. Bring to a boil; reduce heat, cover and simmer for 15 minutes or until vegetables are tender. Add beans and continue to simmer 5-10 minutes or until hot, and flavors are blended. Greetings! I am not up to par. I have a sore throat and a bit of a runny head as a result of a diminished resistance from a drastic weather change and stress from my job. I really needed something comforting and warm to soothe my throat and my psyche. I had most of the ingredients to throw this together tonight so here we have quick and easy bean and bacon soup.
This can be made from your food storage using canned beans, canned stock or bullion and water, home canned bacon, home canned veggies or even dehydrated or frozen veggies. You decide what works for you and what you may have on hand. I have simply used some chicken stock, rendered bacon, canned great northern beans, celery, carrots, onion, garlic, bay leaf, thyme, marjoram and celery seed as well as some pink salt and pepper. I let the whole thing simmer for about 20 minutes and dinner was ready. We just ate this with some bread and butter. It was a hearty and satisfying and healthy meal that made everyone happy to sit down to dinner.
I hope that this gives you some ideas about how you can throw together a quick soup in the middle of the week from what you may have on hand. A little thought and a little creativity can supply you with a wonderful dinner in no time that will feed souls as well as bellies.

Nothing is more comforting than this delicious BACON, SAUSAGE POTATO AND BEAN SOUP, especially when it's chilly and drizzly outside. This soup is a definition of comfort food, and the leftovers are even better. This soup is perfect for chilly days or busy weekdays... you gather your ingredients then let it simmer and cook. You will have a generous meal for your family before you know it. I like to season my soup well, there is nothing worse than having a big bowl of soup with bland or no flavor. The Bacon, smoked sausage, red kidney beans and potatoes is a whole meal in one pot, and it's also the garlic, onions, bell peppers and seasoning that makes it totally complete. I love to serve it with some toasted crispy bread or top it with homemade tortilla strips. Nothing spells EASY AND DELICIOUS better than this soup. ❤
INGREDIENTS----------------
12 OZ.Smoked beef sausage (slices)
7 slices Thick cut bacon (1 inch pieces)
1 large onion (diced)
3 diced green onions (white and green parts)
2 big garlic cloves (minced)
1/2 medium green bell pepper (diced)
1/2 medium yellow bell pepper (diced)
1 Qt. water
1 tsp onion powder
1 tsp garlic powder
1/2 tsp dried thyme
pepper (to your liking)
salt (to your liking) (careful with salt)
2 tsp Chicken bouillon (I used Knorr)
2 tsp Chicken bouillon tomato flavored (knorr)
2 15oz. Cans light red kidney beans
2 & 1/2 C. diced tomatoes
3 small Bay leaves
2 C. pealed & cubed gold potatoes
2 medium jalapeños (seeds and veins removed, sliced) (Optional)
chopped parsley
SIDES-------------
Toasted bread slices
Crispy tortilla strips
TORTILLA STRIPS----------------------
Corn tortillas cut into strips (as needed)
Olive oil (enough to coat well)
pepper (to your liking)
salt (to your liking)
paprika (just enough to give it color)
Toss together in bowl then spread out on cookie sheet and toast till crispy and gold (350°)

creamed bean soup with bacon and mushroom (in the style of Joel Robuchon)
This week we walk in the steps of a famous French chef called Joel Robuchon and try to recreate and adapt one of his recipes. The crémé légère de haricots au lard is a creamed bean soup that is blended with chicken consommé, whipped cream, mushroom and pan fried pancetta. The whipped cream added at the end adds a real fluffiness to the soup. Note: the original recipe uses truffles but for today porcini mushrooms will do. ???????? ENROLL IN MY ONLINE COOKING CLASSES:

150 grams (5.29 oz) white cocos beans if you can find some (I used cannelini beans instead)
half a carrot
half a onion pricked with 2 cloves on it
3 garlic cloves
1 small bouquet garni
50 to 100 grams (1.7 to 3.5 oz) non smoked pork belly
250 ml (1 cup) clear chicken broth
80 ml (2.7 Fluid oz) cream (heavy whipping cream)
1 tablespoon duck fat
To finish the soup:
30 grams (1 oz) streaky bacon or pancetta (very finely diced)
2 or 3 tablespoons dried porcini mushroom (have to be soaked first before used)
in 1 teaspoon duck fat
just before serving add:
80 ml (2.7 Fluid oz) whipped cream (to add to the soup just before serving)
Note: I think that shitake mushrooms could work as well

Ingredients:
1/2 pound navy beans, soaked overnight
5 cups chicken broth
2 Tablespoons butter
1 medium onion (one cup)
2 small cloves of garlic
3 roma tomatoes, chopped with no seeds
1/2 teaspoon marjoram
1/4 pound bacon
salt/pepper/parsley
