How To make Barbecued Alligator Tail 1
4 Alligator tail steaks,
-about 3/4" thick Milk for marinade 1/2 ts Fresh ground black pepper
1/4 ts Cayenne pepper
1 tb Rosemary
Red pepper flakes Place milk in a deep bowl, add pepper flakes and rosemary. Season meat with black and cayenne peppers. Place meat in the bowl, add milk as needed to cover. Let marinate 3-4 hours. Remove meat from marinade, discard marinade. Pat the meat dry. Re-season the meat, if desired, with black and red peppers. Add salt to taste, if desired. Brush meat with olive oil to reduce sticking, and grill over hot coals, or over medium heat in a gas grill for about 10 minutes each side, brushing with oil again when turning.

Blackened Alligator Recipe - How To Cook Alligator - Cajun Seasoning
This Blackened Alligator Recipe was a nice change from your typical seafood snack. The Cajun Black Blackened Seasoning was a great pairing with this Alligator Recipe. This was the first time I have cooked Alligator, and maybe only the 3rd time I have ever eaten it. One thing I like about cooking it like this is that you can taste the Alligator more than the Fried Alligator Recipes I have tasted.
I made a simple sauce to go with these Alligator Bites. I really don't have a recipe but the ingredients are below
* mayonnaise
* dijon mustard
* cajun black seasoning
* lemon juice
* minced garlic
Below is a Homemade Blackened Seasoning Recipe if you don't have Sweet Smokie Joe Cajun Black:
1 heaping tablespoon paprika
2 teaspoons salt
1 heaping teaspoon garlic powder
1 heaping teaspoon onion powder
1/4 to 1/2 teaspoon ground cayenne pepper
2 teaspoons black pepper
1/2 teaspoon dried leaf thyme
1/2 teaspoon dried leaf oregano

Cooking Directions
Prepare gator tail in manageable pieces then season with favorite
2 TBSP Creole Seasoning
2 TBSP Garlic Powder
2 TBSP Onion Powder
Wet Marinade
2 cups of buttermilk
1 egg
1 Tsp creole seasoning
1/4 cup Franks red hot wing sauce
Let gator tail Marinate for at least 30 mins
Flour Mix
2 Cups of Flour
2TBSP Creole Seasoning
1 1/2 cup of Mayo
1 tsp garlic powder
2 TBPS cup ketchup
1 TBSP worcestershire sauce
1 TBSP Hot sauce
pinch of salt
1 tsp lemon juice or half lemon squeeze
Refrigerate for at least 30 Mins
Heat oil to 350 degrees. Cook 4-5 mins until golden brown.
