How To make Bacon and Bean Soup
3 sl Back bacon
3 Stalks celery, chopped
2 md Carrots, chopped
1 md Onion, chopped
1 c Chopped turnip
3 c Beef broth
1 Bay leaf
1/2 ts Thyme
1 cn (19oz) kidney OR pinto
-beans, drained and rinsed
Prep time: 25 minutes. When the vegetables are finely chopped it takes only a short simmering time to develop and blend the flavors of the bacon and assorted winter vegetables. The beans add character and a heartiness that is satisfying. And an added plus - the soup is better a day or two after it is made. Store it in a covered container in the refrigerator. Cut bacon into thin slivers. In a 12 cup saucepan, combine bacon,celery, carrots, onion, turnip, beef broth, bay leaf and thyme. Bring to a boil; reduce heat, cover and simmer for 15 minutes or until vegetables are tender. Add beans and continue to simmer 5-10 minutes or until hot, and flavors are blended. Remove the bay leaf and ladle into warm soup tureen or soup bowls. Makes 8 servings. Origin: Light & Easy Choices Shared by: Sharon Stevens.

3 roma tomatoes, chopped with no seeds
1/2 teaspoon marjoram
1/4 pound bacon
salt/pepper/parsley

Copycat Campbell's Bean and Bacon Soup
Make your own Bean and Bacon Soup. Tastes just like (or better than) the original. Easy from scratch recipe. If you're not a canner, no worries because this is a small batch recipe perfect for feeding a family a comforting meal.
3 c. dried navy beans, soaked overnight or quick soak method
1 qt. chicken or vegetable stock (add add’l quart if canning)
1 6 oz. can of tomato paste
6 T. of dried minced onion or 1 c. fresh chopped onion
1 c. chopped carrots
1 lb. thick cut apple wood or cherry wood smoked bacon, chopped and sauteed until fat rendered and slightly crisp
2-4 c. water
1 bay leaf
2 t. seasoned salt
1 t. Old Bay seasoning
2 t. black pepper
1/2 t. liquid smoke
1 t. Better Than Bouillon Beef base
Ladle hot soup into clean jars hot jars leaving 1 headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can quarts for 90 minutes, pints for 75 adjusting for altitude as follows:

4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 24 hours, remove rings, wash jars and store in a cool dark place.
