How To make Bacon and Bean Soup
3 sl Back bacon
3 Stalks celery, chopped
2 md Carrots, chopped
1 md Onion, chopped
1 c Chopped turnip
3 c Beef broth
1 Bay leaf
1/2 ts Thyme
1 cn (19oz) kidney OR pinto
-beans, drained and rinsed
Prep time: 25 minutes. When the vegetables are finely chopped it takes only a short simmering time to develop and blend the flavors of the bacon and assorted winter vegetables. The beans add character and a heartiness that is satisfying. And an added plus - the soup is better a day or two after it is made. Store it in a covered container in the refrigerator. Cut bacon into thin slivers. In a 12 cup saucepan, combine bacon,celery, carrots, onion, turnip, beef broth, bay leaf and thyme. Bring to a boil; reduce heat, cover and simmer for 15 minutes or until vegetables are tender. Add beans and continue to simmer 5-10 minutes or until hot, and flavors are blended. Glen makes his Bean And Bacon Soup With Pozole or Hominy... now this is a crazy simple soup recipe 'hack' that borrows from a lot of different cuisines, and yet isn't really any of them. It has hints of a Mexican posole / pozole - but we know that it isn't. What it is: easy and tasty!
Ingredients:
200g bacon, diced
1 large onion, diced
10 mL (2 tsp) ground cumin
1-2 cloves garlic, crushed
10 mL (2 tsp) oregano
1-2 chipotle peppers in adobo sauce, chopped
1 can (796 mL / 28 oz) diced tomatoes
3 cans (540 mL / 19 oz) beans, drained and rinsed
1 can (796 mL / 28 oz) white pozole / hominy, drained and rinsed
2L (8 cups) pork stock or chicken stock
Method:
In a large pot render out the bacon, and cook just until starting to crisp.
Add in the diced onion and sweat until softened.
Add in the cumin, crushed garlic, oregano, and chipotle; stir and cook briefly.
Add in the tomatoes, and cook while stirring 2-3 minutes.
Add in the beans, hominy, and stock.
Cook on low heat at a simmer, and stir occasionally for 30-40 minutes.

SHORTCUT for tasty Bean with Bacon Soup! The INSTANT POT!
1/2 sweet onion, chopped
3-4 carrots, chopped
1/2 cup celery, chopped
2 cups Northern Beans
4 cups chicken broth
1 teaspoon liquid smoke
6 slices of bacon, chopped small
Pepper
Celery Seed Mix (onion powder, salt, garlic powder & celery seed)
Thyme
Poultry Seasoning
2-3 chicken bouillon cubes
1 teaspoon tomato paste
1 tablespoon ketchup
Splash of red wine vinegar
Rinse beans clean and drain well. Chop vegetables and add to instant pot with beans. Add in rest of ingredients and stir to combine. Close with lid and pressure cook for 1 hour 15 minutes. When finished, use immersion blender to blend soup for about 10-15 seconds, leaving most beans whole. Serve with dollop of chow chow and fresh onions if desired.

1/2 pound navy beans, soaked overnight
5 cups chicken broth
2 Tablespoons butter
1 medium onion (one cup)
2 small cloves of garlic
3 roma tomatoes, chopped with no seeds
1/2 teaspoon marjoram
1/4 pound bacon
salt/pepper/parsley
