Slow Cooker Pinto Bean and Bacon Soup
SLOW COOKER PINTO BEAN AND BACON SOUP

If you love navy bean and bacon soup then you must try this recipe! Why use pinto beans just in refried beans or in chili? These beans require no presoaking and only take 7 hours on high in the slow cooker! I hope you give this recipe a try.
RECIPE:
INGREDIENTS:
20 oz. pkg. Hurst'sⓇ HamBeensⓇ Pinto Beans with Ham Flavor (save flavor packet and add at the end of cook time)
1 white onion, diced
3 carrots, diced
3 celery stalks, diced
1 jalapeno, minced (optional, add if you want it spicy)
8 slices bacon, cooked and sliced
2 tsp. dried thyme
12 cups chicken broth
salt and pepper to taste (add at the end)
SLOW COOKER SIZE:
6-quart or larger
INSTRUCTIONS:
Rinse and sort the beans, discard any debris. Add to the slow cooker, no need to presoak.
Add the onion, carrots, celery, jalapeno, bacon, thyme and chicken broth. Wait to add the ham flavor packet. Stir.
Cover and cook on HIGH for 7 hours without opening the lid during the cooking time.
When the cooking time is up, sprinkle over the included ham flavor packet. Add salt and pepper to taste. Stir.
Serve and enjoy!

BEAN WITH BACON SOUP
Recipe is per 1 quart jar
1 cup navy beans
2 tablespoons onion
2 tablespoons celery
2 tablespoons carrots
2 strips bacon, chopped
1⁄4 teaspoon hickory liquid smoke
2 teaspoons ketchup
Dash Nature’s Seasons
2 chicken bouillon cubes
1 cup chicken broth
1 cup water
Salt and pepper to taste
Pour all ingredients in clean and sterilized quart jar. Wipe top and place lid on top. Hand tighten. Put in pressure canner for 90 minutes (start timer after the jiggler starts moving). To eat, add to chicken broth in saucepan and heat over medium heat, and serve.

RECIPE: INGREDIENTS: 8 oz thick diced bacon, 1 cup diced onion, 1 cup diced carrots, 3/4 cup diced celery, 1 clove minced garlic, 2 tbs tomato paste, 4 cups chicken broth, 3 cups water, 1 pound dried northern white beans ( or other beans) 2 bay leaves, 1 tsp fresh thyme or 1/2 tsp dried thyme, 1 tsp salt, 1/4 tsp pepper
DIRECTIONS: Cook bacon and drain on paper towels cut in small pieces. Add vegetables and cook until onions are translucent 4-5 minutes in 2 tbs bacon grease. Add garlic and tomato paste stirring for a minute or two. Add chicken broth water, beans, bay leaves, thyme, salt and pepper, and bacon. Bring to a boil and reduce to simmer and cook for an hour or so. Remove half of the soup with the beans and purée it in a food processor to thicken the soup and put it back in the soup. This should cook between one hour and one hour and a half. ENJOY ????

1 large yellow or red onion
2-5 carrots
5 ribs celery well washed
2 cloves garlic, minced
350g dried beans OR 2-4 cans of plain beans (no sauce)
