How To Make Bean With Bacon Soup Recipe
Welcome Friends! Welcome back to the kitchen; today we're going to make a soup recipe. A very simple soup that relies on very simple ingredients: Beans and Bacon.
Ingredients:
250g bacon, chopped
1 onion, diced
250 mL (1 cup) diced celery
250 mL (1 cup) diced carrot
2-3 cloves garlic, minced
5 mL (1 tsp) dried oregano
salt and pepper
10 mL (2 tsp) dried chipotle pepper
750 mL (3 cups) broth
375 mL (1 1/2 cups) stewed tomatoes
2 - 540 mL cans beans, drained and rinsed
Method:
In Dutch oven or soup pot, cook bacon over until fat is rendered and bacon is crisp.
Add onion, celery, carrot, and garlic; cook until onion is softened.
Add oregano, salt, black pepper and dried chipotle, stir in.
Stir in beans, tomatoes, and broth; reduce heat to a simmer, cover and cook for 30 - 60 minutes

Copycat Campbell's Bean and Bacon Soup
Make your own Bean and Bacon Soup. Tastes just like (or better than) the original. Easy from scratch recipe. If you're not a canner, no worries because this is a small batch recipe perfect for feeding a family a comforting meal.
3 c. dried navy beans, soaked overnight or quick soak method
1 qt. chicken or vegetable stock (add add’l quart if canning)
1 6 oz. can of tomato paste
6 T. of dried minced onion or 1 c. fresh chopped onion
1 c. chopped carrots
1 lb. thick cut apple wood or cherry wood smoked bacon, chopped and sauteed until fat rendered and slightly crisp
2-4 c. water
1 bay leaf
2 t. seasoned salt
1 t. Old Bay seasoning
2 t. black pepper
1/2 t. liquid smoke
1 t. Better Than Bouillon Beef base
Ladle hot soup into clean jars hot jars leaving 1 headspace. Debubble, wipe rims, center lid and add rings to fingertip tight.
Pressure can quarts for 90 minutes, pints for 75 adjusting for altitude as follows:

4,001-6,000 ft 15 13
6,001-8,000 ft 15 14
8,001-10,000 ft 15 15
This recipe CANNOT be safely water bath or steam canned.
Allow jars to cool undisturbed 24 hours, remove rings, wash jars and store in a cool dark place.

RECIPE: INGREDIENTS: 8 oz thick diced bacon, 1 cup diced onion, 1 cup diced carrots, 3/4 cup diced celery, 1 clove minced garlic, 2 tbs tomato paste, 4 cups chicken broth, 3 cups water, 1 pound dried northern white beans ( or other beans) 2 bay leaves, 1 tsp fresh thyme or 1/2 tsp dried thyme, 1 tsp salt, 1/4 tsp pepper
DIRECTIONS: Cook bacon and drain on paper towels cut in small pieces. Add vegetables and cook until onions are translucent 4-5 minutes in 2 tbs bacon grease. Add garlic and tomato paste stirring for a minute or two. Add chicken broth water, beans, bay leaves, thyme, salt and pepper, and bacon. Bring to a boil and reduce to simmer and cook for an hour or so. Remove half of the soup with the beans and purée it in a food processor to thicken the soup and put it back in the soup. This should cook between one hour and one hour and a half. ENJOY ????
