-Virginia Housewife, 1831 "Take freshly gathered Apricots not too ripe; to Half their Weight of loaf Sugar, add as much Water as will cover the Fruit; boil and skim it: then put in the Apricots, and let them remain five or six Minutes; take them up without Syruup, and ;ay them on Dishes to cool; boil the Syrup till reduced one Half; when the Apricots are cold, put them in Bottles, and cover them with equal Quantities of syrup and French Brandy. The Apricot Cocktails for Apricot Day are absolutely amazing. The Cocktails I'm making are an Apricot Vodka Cocktail (Apricot Martini), an Apricot Brandy Sour (Apricot Sour) and an Apricot Punch. I have used an Apricot Jam, but you could quite easily use an Apricot Puree, Apricot Brandy, or make Cocktails with Apricot Liqueur. If you're using Jam (Jelly in the US) to make your Apricot Cocktails, I highly recommend heating the Jam to make it slightly runny.

800ml Vodka
180g Yellow rock sugar

Dried Apricot Jam! Traditional Homemade Dried Apricot Jam Recipe
I want to share the recipe for dried apricot jam
Ingredients:
600 grams of dried apricots
5 cups of water
6 cups of sugar (1050g)
1 teaspoon of butter
1 teaspoon of lemon salt
Juice of half a lemon
Note: it is much better if you wet the apricots the night before and cook them the next day.

Drunken Apricots (Best Recipe) How to Make It
Drunken Apricots Recipe:
• 1 pound of apricots (halved & pitted)
• 1 3/4 cups brandy
• 3/4 cups organic cane sugar
• 1/4 cup spring water
• 1 tablespoon rose water
• 2 springs of thyme
Canning Jar and lid (sterilize)
Canning funnel (sterilize, optional)
Directions:
Combine brandy, sugar, water in a medium saucepan
using medium-high heat stir until sugar is dissolved.
(5 minutes). Remove from heat, when slightly cooled, add
rosewater and thyme. Place halved apricots in sterile glass jar with lid, slowly pour the brandy mix in. Use a canning funnel if you have one. Allow to cool to room temperature before putting in fridge. Chill for at least 7 days before using. Will keep indefinitely (but, I bet it won’t last long, once you taste it).
This is one of the easiest preserving methods, and really hard to mess up. Plus, it’s a great way to make the most
of seasonal stone fruit.
You can sip the liquid as a cordial and eat the sweet, spiked fruit as a dessert. The Brandy Infused Apricots are great grilled, or serve on top of pound cake, pancakes, french toast, waffles, or spooned over ice cream. Plus, the Infused Apricot Brandy Liquor is delicious to sip on it’s own, or, add to White Sangria (add the apricots sliced or diced) or, splash it on top of a glass of Prosecco. Enjoy!
