1/4 cup butter
softened
3/4 cup light brown sugar :
firmly packed
1 large egg
1 cup cooked and mashed acorn squash
1/2 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 cup chopped pecans
Streusel Topping
* Beat butter and sugar at medium speed with and electric mixer until creamy. Add egg, beating well. Stir in squash and vanilla.
* Combine flour and next 3 ingredients; gradually add to squash mixture, beati ng at low speed after each additon. Stir in pecans. Pour batter into a grease d 9-inch square pan, and sprinkle with Streusel Topping.

Ingredients
1 ¾ cups (220 g) all-purpose flour
1 teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground cloves
¼ teaspoon ground ginger
1 ½ teaspoons ground cinnamon
½ cup (120 mL) (120 mL) canola oil
¾ cup (150 g) granulated white sugar
½ cup (107 g) packed light brown sugar
2 large eggs room temperature
1 ½ cups (341 g) butternut squash puree
¼ cup (60 mL) orange juice (or water)
Instructions
1. Preheat and prepare pan. Preheat oven to 350°F. Spray a 9×5” loaf pan with non-stick cooking spray or grease with butter and set aside.
2. Combine dry ingredients. In a mixing bowl, whisk together flour, baking soda, salt, nutmeg, cloves, ginger and cinnamon.
3. Combine wet ingredients. In the same mixing bowl whisk together oil, sugars, eggs, squash, and water until combined.
4. Combine wet and dry ingredients. Add the dry ingredients to the wet ingredients and mix together with a spatula until just combined.
5. Bake. Pour the batter into the prepared loaf pan and bake for 60-65 minutes until a toothpick inserted in the center of the bread comes out clean. Remove from the oven and allow the bread to cool completely in the pan set on a wire cooling rack.
6. Storage: Store the bread, and any leftovers, covered at room temperature for 2 days, or in the refrigerator for up to 1 week.

SQUASH CAKE - MILKY PUMPKIN/NO OVEN RECIPE
INGREDIENTS:
1-2 Kg matured squash (winter)
3 cups flour (cake flour or APF)
2 Cups sugar
3 Tbs baking powder
1 cup powdered milk
2 eggs
3-4 cups water
2 Tbs vanilla flavor
100 g melted butter
Condense milk and white chocolate for toppings or you can use any toppings or icing you desire.

Although squash is a fruit according to its botanical classification, it is generally considered a vegetable in food preparation.

How to Cook Acorn Squash
Acorn squash is a treat straight from the garden! This veggie has a delicious buttery orange interior and is so easy to prepare. All it takes are a few small steps and some time in the oven and voila! You’re going to love it!

✅Ingredients
• 1 acorn squash
• 2 tablespoon salted butter
• 1-2 teaspoons sea salt and black pepper for savory
• 2 tablespoons brown sugar for sweet
• 1/2 teaspoon cinnamon for sweet
✅Instructions
1️⃣ Preheat oven to 400 degrees Fahrenheit and prepare a baking sheet by lining it with parchment paper.
2️⃣ Wash and cut 1-inch off the stem of the squash. Place the cut side down and then cut in half.
3️⃣ Using a spoon, scrape out the seeds. Criss Cross cut the flesh to help seasonings get further into the flesh,
4️⃣ Rub with butter and sprinkle with either sweet or savory seasonings.
5️⃣ Roast in oven, cut side up, for about 55-60 minutes based on the size. Flip over and let cool for just a bit. Will be done when fork tender.
