WHITE EGGPLANT & OKRA STEW – Ivory Coast – Vegan recipe – SAUCE AUBERGINE & GOMBO - Recette vegan
WHITE EGGPLANT & OKRA STEW – Ivory Coast – Vegan African recipe – SAUCE AUBERGINE & GOMBO - Recette vegan africaine
???? ???? ????
This dish, incorporating two of Africa's most popular and beloved vegetables, the worldly-renowned okra and white eggplant, comes straight from the Ivory Coast.
This dish is said to be called Gboais koho and is believed to originate from the « Wè » people living in western Ivory Coast and eastern Liberia.
With this very atypical preparation of crushed okra and eggplants, this recipe is very reminiscent of Fouti / Lafidi from Guinea.

-------
