7 lb Watermelon rind; peeled 2 1/2 qt ;Water 1/3 c Salt 6 1/2 c Brown sugar 2 c Vinegar 1 c ;Water 1 tb Whole cloves 2 Cinnamon sticks 2 Lemons Pare off the outer green from watermelon rind and cut in 1" squares. Put in large bowl and pour over them the salt and water mixed. Let soak for three days. Drain and let stand in fresh water for one hour. Make a syrup of sugar, vinegar, water and spices. Cut the lemon (rind and all) paper thin. Put melon and lemon into hot syrup and boil until watermelon is clear. Seal in jars. From South Union, Ky. 650 x g watermelon rind 650 x g unrefined brown sugar 1/2 x cup lemon juice 1 x tbsp vanilla water
STEP BY STEP:
- Cut your watermelon rind into small cubes - Soak the rinds for 2 / 3 hours using double the weight of water (1.3 L in this case and add 1/2 a cup of pickling lime or lemon - Rinse well and set aside - Dissolve your sugar (the same weight of your rinds) in 2 cups of water and bring to a boil - Add your rinds to the sugar and let it simmer for 2 hours - 10 minutes before the end of the 2 hours, add vanilla or lemon juice - Let it cool down and refrigerate in a jar
NOTE:
- you can peel your watermelon if you don’t like the green part but I personally love it - Use the preserve for cakes or eat it as is
