How To make Sweetheart Sandwich Cookies
1/4 lb Unsalted butter
1 1/4 c Sugar
2 lg Eggs
1 ts Vanilla extract
1/2 c Unsweetened cocoa
2 c Flour
1/2 ts Salt
1 ts Baking powder
1/2 ts Baking soda
Filling: 4 tb Unsalted butter
1 ts Vanilla extract
4 c Confectioner's sugar
Whipping cream
To make the cookies, cream the butter with the sugar in a large bowl until light. Beat in eggs and vanilla; set aside. Sift the cocoa, flour, salt, baking powder, and baking soda together. Stir the dry ingredients thoroughly into the butter mixture. Cover the bowl with plastic wrap and refrigerate for 2 or 3 hours. Preheat the oven to 375F and butter 2 cookie sheets. Using a teaspoon measure, roll level teaspoons of the dough into balls and place them 2 inches apart on the sheets. Bake for 10 to 15 mins, until cookies are puffed and surfaces slightly dry and cracked. Cool on racks. To make the filling, cream the butter until light. Beat in the vanilla and powdered sugar, adding whipping cream and continuing to beat until the consistency is like creamy frosting. When the cookies are complete cool, spread about 1/2 tablespoon of iflling on the bottom of one cookie, then top with the bottom side of another cookie. Makes about 3 dozen sandwiches. Variation: For half a batch of vanilla-filled and half a batch of peppermint-filled cookies, add 1/8 teaspoon peppermint extract to half the filling. Tint the peppermint filling pink or green before filling half the sandwiches. NOTES : A Goldy Bear mystery set in Aspen, Colorado. Raspberry Jam Sandwich Cookies- Father's day by Jamie Hoo
*Raspberry Jam Sandwich Cookies*
-This is what we need
110 g butter (room temperature)
150 g flour
70 g icing sugar
3 tbsp jam
t tsp vanilla extract
120 g cornstarch 1 egg
a pinch of salt
-Method
1. Preheat oven to 180 degrees C (250 degrees F).
2. In a large bowl, add in butter and icing sugar and beat it till it is combined.
3. Add egg, vanilla extract, salt and combine the well.
4.Then add cornstarch and combine well.
5. Add in the flour with your hand mixing it.
6. Form it into a ball and wrap it with a plastic wrap and put it in the refrigerator for half an hour.
7. After half an hour, take half of the dough out (due to weather , hot) and roll it with a rolling pin on a floured surface.
8. Using desire shape of cookie cutter to cut the dough.
9. Bake the cookies for 10-15 minutes. PS: the cookies should not be browned.
10. Once it is baked, put it on the wire rack to cool down.
11. It's Filling Time! And we are all done.

Ingredients:
1 cup (230g) Butter, softened
2/3 cup (85g) powdered sugar
1 teaspoon Vanilla extract
1/4 teaspoon Salt
1 Egg yolk
2¼ cups (280g) Flour
Jam of your choice
Directions:
1. Line two baking sheets with parchment paper and set aside. Preheat oven to 170°C (340°F).
2. In a large bowl cream butter and powder sugar until smooth and creamy. Add egg yolk, vanilla extract and mix until combined. Add flour, salt and stir until incorporated and dough is formed.
3. Using a one-tablespoon cookie scoop or measuring tablespoon take 1 tablespoon of dough and roll into balls.
4. Then place the balls on prepared baking sheets. Slightly flatten the balls and then make an indentation with your thumb or with a back of a spoon into each ball. At this stage, if dough is too soft, refrigerate for 30 minutes. Then, fill each with cookie the jam.
5. Bake for 12-15 minutes, the cookies should still be pale, but slightly golden at the bottom.
6. Dust with powdered sugar (optional) and allow to cool on a wire rack.
