I love bitter foods. It’s celebrated in many of the world's favorite foods; everything from coffee, chocolate, mustard, tea, kale, etc. In Southeast Asia, it’s bitter melon. Its distinct bitterness is associated with, “cooling properties,” associated with alkaline foods. And is linked to lowering the body’s blood sugar. In my search for bitter-melon, I connected with a bitter-melon farmer (and expert) on how she likes to eat bitter melon.
Bitter-melon is my favorite, says Ge Moua, owner of Moua farms. Bitter melon has so many health benefits. And my husband and grandson love it when I stuff bitter-melon with pork and make it into soup. Even though Ge and I come from different diasporas (Ge of Lao-Hmong, my family of Vietnamese) we shared this common love for bitter-melon, particularly in this recipe.

INGREDIENTS:
Blanch bitter melons:
1 tsp Salt
4 Bitter Melons
Make Pork Mixture & Soup
1lb Ground Pork
½ lb Fish Paste
1/3 cup Wood Ear Mushrooms (soaked in water 10 min before use and then chopped)
½ tbsp Cooking Oil
1 tsp Black Pepper
2 tsp Fish Sauce
3 tbsp Fried Shallots
2 tsp Fried Garlics
2 tsp Mushroom Seasoning
1 packet Glass Noodles (soaked in water 10 min before use and then chopped)
8 cups Water
1 Rock Sugar
Green Onions
RECIPE:
In a pot of boiling water with salt, blanch the bitter melons for 5 minutes to help remove the bitter taste.
Slice the middle of the bitter melon and remove the seeds.
Next, we are going to make the stuffing.
Chop the wood ear mushrooms and glass noodles by hand or using the food processor.
In a large bowl, put in ground pork, fish paste, wood ear mushroom, glass noodles, cooking oil, black pepper, fish sauce, fried shallots, fried garlics, mushroom seasoning and mix thoroughly.
Then, stuff the bitter melons with the pork mixture.
Now, it’s time to make the broth. Put in boiling water, fish sauce, rock sugar, and the bitter melons.
Pressure Cook for 10 minutes and then Quick Release. Put in some green onions and more fish sauce to your taste. Enjoy this healthy soup everyone.

Stuffed bitter melon with minced pork (Chinese style bitter melon / bitter gourd recipe)
This bitter melon (bitter gourd) recipe with stuffed minced pork is a popular Cantonese dish. You will not regret it once you have tasted it. Its taste is paired perfectly with minced meat and served with the savory black bean taste.

Ingredients A (For the stuffing)
450g minced pork
1 tbsp light soy sauce
1 tbsp oyster sauce
1 tsp minced ginger
2 tsp minced garlic
1 tbsp Shaoxing wine
1/2 tsp salt
1/2 tsp ground white pepper
3 medium-sized dried shitake mushrooms, soak and diced
1 small onion, finely diced
1 tbsp finely diced carrot
Ingredients B (bitter gourd)
2 medium-sized bitter gourd
1tsp salt
Ingredients C (Black bean sauce - optional)
2 clove garlic
2 tbsp store-bought black bean paste
1 tbsp Shaoxing wine
2 tsp oil
1 tsp cornstarch (mixed with 4 tbsp of cold water)
Method:
- Remove both ends of the bitter melon, then cut into rings of about 3/4 inch (2cm) height.
- Remove the seeds and scrape the inner surface with the spoon until it is clean.
- Sprinkle a large teaspoon of salt on them and mix well. Let it rest for fifteen minutes.
- Remove the bitter melon from the salt solution. Rinse away the salt with water.
- Mix all the ingredients A in a large mixing bowl. Leave up the meat paste and repeatedly smash it back to the bowl until it is well combined, sticky, and pasty.
- Divide the stuffing into one oz portions. Press the stuffing to fill up all the space in the ring. The amount should be slightly more than it can contain to form a small dome on the top.
- Place the stuffed bitter melon rings in a steaming tray.
- Steam over medium heat for fifteen minutes.
- Remove the stuffed bitter melons and place them on a serving plate. Drizzle the gravy on top and serve.
Black bean sauce (optional):
- Grind 2 tbsp of black bean paste and garlic with a mortar and pestle.
- Place it in a small pan, add 1 tbsp of Shaoxing wine, and 2 tsp of oil.
- Thicken the sauce with the cornstarch slurry until it reaches the desired consistency you want.
