All My Best Meringue Tips
Lemon Pecan Coconut Meringue Cookies (Gluten Free)
These are flavorful and light little cookies.
Ingredients:
parchment paper (optional)
butter
2 egg whites
1/4 teaspoon lemon extract
2/3 cup sugar
1 tablespoon lemon juice
1 1/3 cups flaked coconut
1/2 cup chopped Toasted Pecans (see recipe for Toasted Pecans)
1 - 2 teaspoons finely grated lemon peel (optional)
Method:
Preheat oven to 325*. If desired, line cookie sheets with parchment paper. Lightly butter parchment paper or unlined cookie sheets. In a large mixing bowl beat the egg whites and lemon extract, on high speed, until soft peaks form. (When the beaters are lifted, the tips curl over.) Gradually add the sugar while continuing to beat the egg whites until stiff peaks forms. (The tips stand straight when the beaters are lifted.) Beat in lemon juice. Gently fold in coconut, pecans and lemon peel. Use 2 teaspoons to drop rounded teaspoons of mixture, 2 inches apart, onto cookie sheets. Bake about 20 minutes or until the edges are lightly browned. Cool slightly on cookie sheets (5 minutes) and then finish cooling on wire racks. Makes about 2 1/2 dozen. Store in airtight containers. (Recipe may be doubled.)
Notes: This is an original recipe that I created for my mother-in-law Danuta, who likes meringues, coconut, pecans lemon and desserts that are not overly sweet. (She was quite pleased!)

Nighty Night Cookies (Meringue Cookies) Recipe!
Thanks for tuning into Cookmas 2021 where every day in December I will be posting a cooking recipe! I will be sharing a variety of delicious recipes from easy crockpot meals, sheet pan meals, to dessert and drink recipes.
Today’s recipe is: Nighty Night Cookies (Meringue Cookies)
Ingredients:
2 Egg whites
2/3 cup of sugar
1 cup chopped pecans
6oz package of chocolate chips
Directions:
Preheat oven to 350 degrees. Mix egg whites at high speed until stiff. Beat in sugar until stiff again. Fold in pecans and chocolate chips. Drop on foil lined cookie sheet by teaspoonfuls. Put cookies in the oven then turn the oven off. Leave in over overnight.

Meringues
Meringues are one of the easiest and
most transtormative foods you can make. A staple when
making desserts and an endless canvas to riff on. Egg
whites, sugar, and creamof tartar are all you need.

Orange Blossom & Dark Chocolate Meringue Cookies
ingredient:
4 egg whites
1/4 tsp cream of tartar
3/4 Cup sugar
*2 tsp orange blossom water
1 ounce of dark chocolate, melted
1 Ounce of dark chocolate, shaved
Preparation:
. Preheat the oven to 25OF/120C.
2. Crack your eggs into an egg separator and whites into a
small bowl. Transfer to a stand mixer or large mixing
bowl. Add in the cream of tartar and begin mixing with
whisk attachment or hand mixer on medium.
3. Once frothy, about 2 minutes, add the orange blossom
water and slowly start adding in the sugar and increase
speed to high. Continue mixing until stiff peaks form,
about 5 minutes.
.Using a spoon or ice cream scoop transfer roughly 1/4
cup amounts of meringue onto a parchment lined baking
sheet roughiy 1-2 apart.
5. Add roughly 1/2 tsp of melted chocolate onto each
meringue and carefully swirl in. Transfer to the oven and
bake for roughly 1 hour or until hardened.
5. Garnish with shaved bittersweet chocolate.

Ingredients for making Meringues:
4 Eggs
1/8 Teaspoon of lemon juice
8.8 oz of caster sugar
Vanilla extract
Salt

Instructions for making Meringues:
- First, separate the whites from the yolks with your eggs and pour the egg whites into a large mixing bowl.
- Add your lemon juice to the bowl, and whip the mixture with a stand mixer and mix until the cream holds it's peaks.
- Then while mixing, add your caster sugar gradually, one tablespoon at a time.
- Once all the sugar is added, turn up the speed on the mixer. Once mixed, check to make sure all the grains are gone.
- Now add your a dash of vanilla extract and a pinch of salt and whip the ingredients until the cream forms stiff peaks.
- Now on a baking pan, use a little bit of cream to glue down your parchment paper, and line the bottom of the pan with it.
- Now form and place small balls of your Meringue in the baking pan.
- You can now place the baking pan in the over at 300°F for 25 minuets. Once that's done, turn off the oven and leave the Meringue in the oven for an hour. The Meringues are ready when they no longer stick to the bottom of the pan.
